  • 1 Pound frozen hash browns
  • 2 1/2 Tbsp unsalted butter, melted
  • 4 Eggs
  • 1 1/2 Cups shredded cheddar cheese, divided
  • Salt and freshly ground pepper
  • 6 Slices bacon, cooked and chopped
  • Freshly chopped chives

How to cook:
  1. Preheat oven to 425.
  2. Line a baking sheet with parchment paper or spray with non stick cooking spray.
  3. Combine hash browns, 1/2 cup cheese, salt and pepper and mix to combine.
  4. Place mixture on prepared baking sheet and form into a pizza shape.
  5. Drizzle with melted butter.
  6. Place in the preheated oven and bake for 20-25 minutes, until golden.
  7. Remove and top with cheese, crack eggs on top and sprinkle bacon over the top.
  8. Return to oven and bake for an additional 15 minutes.*
  9. Top with freshly cut chives and salt and pepper.

  • 3 tablespoons olive oil (divided)
  • 9 large eggs (divided)
  • 30 ounce frozen shredded hash browns (slightly defrosted)
  • 1 large zucchini (sliced)
  • 1 small onion (chopped)
  • 1 small red bell pepper (sliced)
  • 2 cloves fresh garlic (minced)
  • 0.5 pounds bulk sausage (cooked and crumbled)
  • 1 cup shredded Colby jack or cheddar cheese
  • sea salt and ground pepper to taste

How to cook:
  1. Preheat oven to 425 degrees. Lightly beat together 2 eggs with some salt and pepper, then stir in the hash browns. Do your best to mix everything together. The hash browns will not be completely coated, but it will help hold them together.
  2. Add 2 tablespoons of oil to a 12-inch skillet, a standard cast iron skillet, or cast iron pizza pan. Pour the hash brown mixture into the skillet.
  3. Place in the oven and bake for 30 to 35 minutes, until crispy and the potatoes are tender.
  4. Heat 1 tablespoon of oil in a non-stick skillet over medium heat, and sauté the zucchini, onions, and peppers, stirring occasionally until golden, about 8 minutes. Stir in the garlic, and remove from heat. Set aside.
  5. Beat the remaining 7 eggs, salt and pepper together in the large bowl. Gently stir in the sautéed vegetables.
  6. Remove the hash brown crust from the oven and very carefully pour the egg and vegetable mixture evenly over the crust, then spread vegetables out over the crust.
  7. Next, sprinkle the cooked sausage over the the top. Return skillet to the oven for 10 minutes.
  8. Remove from oven and sprinkle with the shredded cheese. Return pan to oven and bake for 3 to 5 minutes, until cheese is melted and bubbly.
  9. Slice and serve while warm. Garnish with chopped parsley, chives or cilantro.

Bacon and Eggs Breakfast Pizza with Hashbrown Crust

  • 4 cups frozen seasoned hashbrowns, thawed, see notes
  • 1/2 Teaspoon smoked paprika
  • 1/4 Teaspoon black pepper
  • 2 eggs
  • 1 1/2 cups grated cheese, 4 ounces, Jack or Mozzarella are both great
  • 6 strips of bacon, cut into bite sized pieces, 6 ounces
  • 6 eggs
  • 1 cup grated cheese, 2 1/2 ounces
  • 1 cup thinly sliced green onions, about 1/2 a bunch
  • 1 cup diced tomatoes, or halved cherry tomatoes
  • 1/2 ripe avocado, thinly sliced or cubed
  • Sriracha to taste
How to cook:
  1. Preheat the oven to 400ºF and line a baking sheet with parchment paper.
  2. Mix together all the ingredients for the hashbrown crust in a bowl until combined. Pat the mixture into a crust shape about 1/2″ thick and 10-12″ in diameter, making small ridges around the edge as you go. Bake the crust for 20-25 minutes, or until golden brown.
  3. While the crust bakes, fry the bacon pieces until they’re crispy, drain and set aside. Prepare your choice of the fresh toppings, and set them aside.
  4. When the crust is done, take it out of the oven and sprinkle the bacon bits over the top. Crack the eggs one at a time into a small dish, and then carefully place the eggs as evenly as you can around the pizza. Top with the grated cheese, and bake again until the eggs are your desired doneness, about 6-8 minutes for over easy eggs.
  5. Remove the pizza from the oven and top with the fresh toppings.
  6. Serve immediately. If you do have any leftovers, remove any avocado before refrigerating them (the avocado turns brown). Then reheat the leftovers gently at 300ºF until warm. The eggs get a little firmer but otherwise it’s still delicious.

  • 8 oz instant hash browns
  • 2 oz Simple Truth Fully Cooked Uncured Applewood Smoked Bacon (about 8 strips)
  • 8 whole eggs
  • 4 oz shredded cheese
  • 4 tbsp olive oil
How to cook:
  1. Preheat oven to 425F. After you've hydrated your hash browns, assort them on an oiled baking sheet to resemble a pizza crust. Drizzle about 2 tbsp oil on top. Bake for about 20 minutes
  2. While the hashbrowns are baking, cooked your eggs scrambled, grate cheese and chop bacon into 1 inch bits.
  3. When the hashbrowns are done baking, take them out of the oven. Top with eggs, cheese, bacon and any other toppings you like. Place in the oven for about 5-10 minutes until cheese is melted and bacon is crispy.
