- 2 cups Broccoli Head (remove feet, finely chop the top part)
- 3 Eggs
- 1 cup Almond Flour
- 2 tablespoons Psyllium Husk
- 1 cup Grated Mozzarella (or grated emmental)
- 1/4 cup Onion (finely diced)
- 1 teaspoon Ground Paprika
- 1 teaspoon Dried Oregano
- 1 teaspoon Salt
- 1 teaspoon Garlic Powder

- Preheat the oven to 400°F (200°C). Cover a baking sheet with lightly oiled parchment paper. Set it aside.
- Remove the broccoli feet and finely chop the broccoli head into tiny pieces. It will precook faster. Place into a steamer and steam for 2-4 minutes or until slightly tender. Drain and rinse with cold water to stop the cooking process and maintain the green colors. Don't overcook the broccoli to avoid a puree, All you want is slight softer broccoli pieces. You can also boil the broccoli pieces in a pot filled with boiling water, for the same 2-3 minutes, drain, and rinse with cold water.
- Transfer the broccoli pieces into a mixing bowl, cool them down for 3-5 minutes, then add all the other ingredients: almond flour, eggs, psyllium husk, onions, paprika, oregano, salt, garlic powder, and mozzarella cheese.
- Combine with a spatula until it forms a batter that you can easily shape into balls with your hands.
- Slightly oil your hands with vegetable oil, scoop about a tablespoon of mixture, and roll it in your hands into balls. Press and roll until it comes together and shapes well. Wash your hands every 3-4 balls as it sticks a lot.
- Place the balls on the prepared cooking sheet, leaving a thumb of space between each broccoli ball.
- Bake for 15 minutes or until golden on the outside.
- Serve hot out of the oven as an appetizer.

- 1 tsp oil
- 1/2 cup finely chopped onion
- 1 large head of broccoli (, florets and tender stem (peel off the knobs from the stem and use))
- 2 tbsp fresh basil leaves (or 1 tsp dried basil)
- 1/2 tsp dried oregano
- 1/2 tsp garlic
- 1/2 tsp chipotle pepper
- 1/4 tsp ground black pepper
- 1/4 tsp 1/3 tsp salt
- 1 tbsp or more nutritional yeast
- 1/4 cup almond meal
- 1/4 cup or more bread crumbs
- 1 chia seed egg (1 tbsp chia seeds or chia seed meal mixed with 3 tbsp warm water, let sit for 2 minutes to gel)
- 1/4 cup my almond milk pepper jack (or other vegan cheese shreds like daiya cheddar or pepperjack optional)

- Heat oil in a pan over medium heat. Add onions and cook for 3 to 4 minutes.
- Pulse the broccoli and basil in a food processor until grated. Add to the pan. (2.5 to 3 cups grated). Add a dash of salt, mix and cook for 3 to 4 minutes to dry out the excess moisture. (If the broccoli is dry, cook for only a minute). Take off heat.
- Add in the spices, almond meal, breadcrumbs. Mix well. Make the chia seed egg or use 1 flax egg (1 tbsp flax seed meal + 2.5 Tbsp warm water) or egg replacer for 1 egg.
- Mix in. Add vegan cheese shreds if using. Add more breadcrumbs if needed.
- Shape the mixture into balls. If the balls are too crumbly (depends on the moisture content, size of grated broccoli etc), add another chia egg, or sprinkle some non dairy milk or aquafaba and mix well.
- Place on parchment lined baking sheet. Preheat the oven to 400 degrees F / 200ºc.
- Bake for a total of 20 to 25 minutes or until crisp and golden on the outside. (Turn the sheet around after 15 minutes, and continue to bake.). you can also sprinkle some cheese shreds on the balls in the last 5 minutes. Serve warm with marinara or over spaghetti or as veggie balls in a sub sandwich.

- 1 1/2 heaping cups fresh broccoli florets
- 1 cup shredded Colby cheese
- 1 cup shredded cheddar cheese
- 4 ounces Velveeta, cut into small chunks
- 1/2 teaspoon crushed red pepper flakes
- 2 1/4 cups Panko crumbs, (divided)
- 1 egg, (lightly beaten)
- 1/2 cup all-purpose flour

- Steam broccoli until slightly softened. Let cool.
- Finely chop broccoli. You want the pieces to be 1/4-inch or less. Place in a large bowl.
- Add cheese, red pepper flakes, 1/4 cup Panko crumbs, and 1 egg to bowl with broccoli. Stir well.
- Use your hands to shape mixture into balls using about a rounded tablespoon for each ball. You should get 12-14.
- Place balls on a plate and refrigerate for at least 30 minutes.
- Place flour in a bowl.
- Place the 2 lightly beaten eggs in a second bowl and mix in 1 tablespoon water.
- Place remaining 2 cups Panko crumbs in a third bowl.

- Make sure the broccoli has been steamed, then chopped into fine pieces
- SECOND STEP:Place them into a large bowl and add the cheese into the bowl along with the Panko bread crumbs, red pepper flakes and one egg.
- Stir well to combine all ingredients
- THIRD STEP:Use your hands to scoop approximately 1 tbsp of the mix and roll into a ball.
- Set these on a parchment lined baking sheet
- FOURTH STEP:Place into the refrigerator and chill for at least 30 minutes.
- In a shallow dish, place the flour
- In another small dish, beat the two eggs
- In a third bowl, place 2 cups of Panko breading mix
- FIFTH STEP:Heat the oil to 375*
- Remove the broccoli balls from the refrigerator and roll first into the flour, then into the egg and finally into the Panko breading mix
- SIXTH STEP:Fry up to 4 Broccoli Cheese balls at a time.
- Cook until all sides are browned
- Continue until all balls are cooked.
- Place them on a paper towel lined plate when removing from the oil
- Serve plain or with your choice of dipping sauces
