This Brown Sugar Boba Milk Tea is one of the refreshing iced drinks to enjoy on hot summer days and can be also served warm to comfort yourself on cold winter days. I drank black sugar bubble tea every day when I visited Taiwan and decided to bring back some tapioca pearls (boba) to make my own at home.

Homemade Brown Sugar Bubble Tea
I drank black sugar bubble tea every day when I visited Taiwan and decided to bring back some tapioca pearls (boba) to make my own at home. This is a versatile recipe: you can vary the tea and milk you use and sweeten it to taste. Brew tea to your preferred strength, though it's a good idea to use strong tea because you're going to dilute it with milk and ice. You'll need a wide straw to drink the boba, or use a long spoon for fishing them out!

  • 4 ¼ cups water, divided
  • ¼ cup white tapioca pearls (boba)
  • 2 tablespoons black tea leaves
  • ¼ cup brown sugar
  • 1 cup ice cubes
  • ¼ cup milk
  • 2 tablespoons sweetened condensed milk, or to taste

How to cook:
  1. Bring 2 cups water to a boil in a small saucepan. Add tapioca pearls and stir gently until they begin floating to the top. Reduce heat to medium and simmer until softened and dark, about 25 minutes. Remove from heat, cover, and let sit for 15 minutes.
  2. Meanwhile, bring 2 cups water to a boil. Remove from heat and add tea leaves. Let steep for 15 minutes. Strain out tea leaves and refrigerate tea.
  3. Drain pearls. Bring 1/4 cup water to a boil in the empty saucepan. Stir in brown sugar until dissolved. Immerse pearls in syrup and let sit until room temperature, about 15 minutes
  4. Divide pearls and desired amount of syrup between 2 tall glasses. Pour in tea.
  5. Add ice, milk, and sweetened condensed milk to both glasses. Stir before drinking.

How to cook:
  1. To cook Boba Pearls
  2. In a saucepan with medium heat, pour 4 cups of water and bring it to boil
  3. Add 1 cup of instant boba pearls and allow it to cook for 2 to 3 minutes
  4. Close the lid of the pan and cook the boba until it doubles in its size in low heat (you can also refer to the package cooking instructions)
  5. Open the lid and drain the cooked boba and reserve it for later use ( I would suggest you keep the cooked boba in the water itself if you are not immediately using it in the sugar syrup)
  6. To make Brown Sugar Syrup
  7. In a pan with medium heat, add 1 cup of brown sugar and mix until it melts
  8. Add the drained boba to the brown sugar syrup and cook until it turns sticky
  9. Now the sticky and sweet Brown Sugar Boba Syrup is ready to make boba milk tea
  10. To make Brown Sugar Milk Bubble Tea
  11. In a serving glass, add 3 tbsp of Brown Sugar Boba syrup and swirl the glass to spread the syrup. This will help to create the tiger stripes like impression on the glass
  12. Add ice cubes and fill the glass with cold milk. Now the sweet and addicting Brown Sugar Milk Bubble Tea is ready for you to taste and enjoy

How to cook:
  1. Brown Sugar Boba Pearl Syrup
  2. Prepare your tapioca pearls according to the package.
  3. In a pot, combine the muscovado sugar with 40 ml of water and bring it to a boil. Turn down the heat to a simmer and add in the prepared tapioca pearls. Simmer until the brown sugar syrup has thickened. Simmering the cooked tapioca pearls in the syrup just adds more flavour to them.
  4. Remove from heat once it has thickened.
  5. Matcha Bubble Tea
  6. In a small bowl, whisk together the matcha powder and hot water. Set aside.
  7. In a cup, add in half of the brown sugar syrup with the pearls. Add in the ice cubes.
  8. Top with half of the whisked matcha and half of the milk.
  9. Stir to combine and enjoy!

How to cook:

  2. Using a spoon, apply brown sugar syrup along the insides of your boba cup
  3. Add cooked tapioca pearls
  4. Mix the Matcha Milk Tea Powder into a separate cup of 250ml of 80°C hot water and stir until dissolved
  5. Add creamer first, then add fructose according to desired sweetness. Stir until dissolved
  6. Pour the Matcha milk tea into your boba cup
  7. Add generous amount of ice if desired, stir and enjoy!
