  • 8 ounce cream cheese, softened
  • 1 cup sour cream
  • 1/2 cup buffalo sauce (Frank's Red Hots is my favorite)
  • 1 1/2 cups shredded cheddar cheese, divided
  • 2 Tablespoons blue cheese dressing, or Ranch, for garnish
  • Fritos scoops, baguette slices, carrot/celery, for dipping

How to cook:
  1. In a large bowl, combine shredded chicken, cream cheese, sour cream, buffalo sauce, and 1 cup of the shredded cheddar cheese.
  2. Mix with a large spatula until fully combined. Spread in the bottom of a 1.5 qt baking dish. Sprinkle the remaining 1/2 cup cheddar cheese over the top.
  3. Bake in a 350 degree F oven, uncovered, for 15-20 minutes, until cheese is melted and bubbly.
  4. Remove from oven and immediately drizzle with blue cheese or ranch dressing. Serve with baguette slices, Fritos scoops, and/or carrots and celery. ENJOY!

I got this Buffalo chicken dip recipe from a respiratory therapist at the hospital where I work. He brought it to a party and everyone asked for the recipe. I appreciate all the reviews that have been written about this recipe since I posted it so long ago. I see more and more that people are making it with freshly cooked chicken - great idea. I also like the idea of using rotisserie chicken. The original recipe used canned chicken for convenience, but I agree with all of you that the fresher meat tastes better. Barb P.S.   • 1 Tablespoon butter
  • 4 medium cloves garlic (minced)
  • 8 ounces cream cheese (room temperature, cubed, 1 full brick)
  • 3/4 cup - 1 cup Frank’s Original RedHot Sauce (depending on spice preference)*
  • 1 cup sour cream or ranch dressing (either will work, but you don’t need both)**
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon ground black pepper
  • Salt (to taste)
  • 4 cups shredded rotisserie chicken
  • 1 1/2 cups freshly shredded mozzarella cheese (divided)***

How to cook:
