Ingredients:
  • 1 lb of pizza dough (see this post for my go-to recipe)
  • 2 medium chicken breasts, diced
  • ½ cup buffalo hot sauce
  • 1 tablespoon olive oil
  • ½ cup bleu cheese or ranch dressing
  • Flour and cornmeal, for preparing the dough
  • 1½ cups shredded sharp white cheddar cheese
  • 1½ cups shredded mozzarella cheese
  • Egg wash
  • Extra buffalo hot sauce or dressing, for dipping
How to cook:
  1. In a large resealable plastic bag, place the chicken and the buffalo sauce. Toss to coat and then allow to marinate for at least 6 hours in the fridge (I often do this before I leave for work in the mornings – then it’s ready for me when I get home. Overnight works too!).
  2. Preheat a large skillet over medium-high heat and add 1 tablespoon of olive oil. Once hot, add the chicken and any residual sauce into the skillet. Cook, stirring frequently, for 10 minutes or until all the chicken is cooked through. Allow to cool in the pan. Once the chicken is mostly cool, stir in the bleu cheese (or ranch) dressing.
  3. Place a pizza stone in the oven and preheat to 475°F. Sprinkle cornmeal on a pizza peel. Alternatively, lightly oil a large baking sheet.
  4. Divide the dough into six balls. Roll each dough ball out to ¼-inch thickness. Working with one at a time, sprinkle ¼ cup of cheddar cheese on one half of the dough round, then some of the chicken, and finally ¼ cup of the mozzarella cheese. Brush the edges of the dough with egg wash, and then carefully fold the dough over the filling. Press the edges to seal and trim off excess dough.
  5. Carefully transfer the calzone to the prepared pizza peel (or baking sheet) and then cut a slit in the top to allow air to escape. Brush the top with more egg wash and sprinkle with sea salt. If using a pizza peel, work with the calzones in batches of 2-3. If using a baking sheet, you can probably fit all of the calzones on the sheet at one time (depending on the size).
  6. Place the calzones in the oven and bake for 11-13 minutes, or until golden brown. Remove from oven and allow to cool for a few minutes before slicing in half and serving. Dip as desired.

Ingredients:
  • 1/2 batch pizza dough* (see note)
  • 2 C cubed chicken breast** (see note)
  • 1/2 C buffalo sauce (divided)
  • 1/4 C chunky blue cheese dressing
  • 1 C mozzarella cheese (shredded)
  • 1 C mild cheddar cheese (shredded)
How to cook:
  1. If prepping dough a day ahead, store in a greased and covered bowl after the full rise time. Toss in the fridge until ready to use. Pull out of the fridge 45-60 minutes before making your calzones.
  2. Prepare chicken by trimming any fat and cutting into bite size cubes. Toss cubed chicken into a bowl or food safe storage container. Top off with 3 tbsp buffalo sauce. Stir to coat. Cover container with plastic wrap or lid. Store in the fridge to marinate overnight.
  3. If making dough the day of, plan for the dough to take at least 1hr and 10-15min total. It's a quick dough but does still require rising time. You can let the dough rise for the full hour, split and rise again if desired.
  4. Preheat oven to 500°F. Heat a large skillet over medium to medium high heat. Cook chicken and additional 2 tbsp buffalo sauce. Stir well, cooking chicken for 5-10 minutes or until fully cooked. Transfer to a clean bowl. Add an additional 1/4C buffalo sauce to chicken. Stir to coat. Set aside.
  5. Prepare a baking sheet with one of the following: silpat, parchment, olive oil or cornmeal. Choose which works best for you. I opted for my silpat. Divide dough into as many portions as you'd like. I made two (out of the half a batch of dough*). Stretch dough into a large circle or rectangle. It doesn't have to be perfect. Let gravity help as well as pushing on the dough gently while resting on your prepared baking sheet. Flip and continue process until you are satisfied with the size.
  6. Coat one half of the dough with chunky blue cheese dressing - almost to the edge but not quiet. Top off with cooked buffalo chicken.
  7. Sprinkle with a mixture of both cheeses.
  8. Fold over the dough. Roll and pinch the edges to seal. Sprinkle with a touch more cheese.
  9. Repeat process with remaining dough and ingredients on a second baking sheet.
  10. Bake for 12-15 minutes. I found 13 minutes was just perfect. Let cool for a few minutes, then cut with a serrated knife into as many slices as desired.
  11. Serve warm and enjoy.

How to cook:
  1. Preheat oven to 375 degrees.
  2. Combine the chicken, onion, dressing, wing sauce, and cheeses in a bowl.

  • 16-20 ounces pizza dough
  • 6-7 fully cooked crispy chicken tenders, sliced (I like Tyson Crispy Chicken Strips)
  • 1/2 medium red onion, thinly sliced
  • 8 ounce bag shredded mozzarella cheese
  • 1/3 cup buffalo sauce
  • 2 tablespoons butter, melted
  • flour for dough
  • Blue cheese dressing, for serving
How to cook:
  1. Preheat the oven to 400 °F. If using frozen chicken tenders, cook them ahead of time according to the directions on the package. Slice into smaller bite-sized peices and set aside.
  2. Meanwhile, roll out the dough into a 12-inch circle, like you would pizza crust.
  3. Choose one half, and spread buffalo sauce over the dough, leaving a one inch border around the edge. Top the same half with chicken, red onion, and mozzarella cheese.
  4. Fold the other half of the dough over the filling to the opposite edge, forming a half moon shape. Pinch the ends together to seal.
  5. Place calzone on a greased baking sheet and baste the entire top with melted butter. Bake for 20-25 minutes or until top of the calzone is slightly golden.
