These juicy, flavorful skewers are a light, smoky twist on everyone’s favorite Buffalo wings. Bottled dressings are a nice convenience, but nothing beats homemade. Plus, you control the ingredients. This blue cheese dressing is loaded with lots of flavorful seasonings and made creamy with luscious Greek yogurt for all the yumminess you crave without the fat. Chicken tenderloins cook fast, so keep an eye on them so they don't overcook and dry out. To up the spiciness here, add some cayenne to the melted butter mixture. Serve these skewers over a bed of crunchy greens like romaine or iceberg lettuce. Or serve them deconstructed with an array of raw veggies and the dipping sauce on the side.

  • 0.333 cup(s) Blue cheese crumbled

How to cook:
  1. To make dip, combine first seven ingredients (yogurt, blue cheese, salt, pepper, Worcestershire sauce, garlic, and chives) in a bowl; chill until ready to use (can be made up to 2 days before serving).
  2. Next, combine salt, garlic, chili powder, and paprika in a small bowl; sprinkle evenly over chicken. Thread each piece of chicken lengthwise onto a 6-inch skewer. (Soak wooden skewers in water for 20 minutes before using to prevent burning.)
  3. Off heat, coat a grill or grill pan with cooking spray; heat over medium-high heat. Cook chicken, flipping once, until cooked through, about 3-4 minutes per side.
  4. When ready to serve, melt butter in a small saucepan over medium-low heat (or in microwave); stir hot sauce into melted butter. Brush cooked chicken evenly with butter mixture; drizzle any remaining butter mixture over top. Serve skewers and vegetables with dipping sauce, sprinkled with remaining chives.

  • 4 oz 1/3 less fat cream cheese (softened (Philadelphia))
  • 1 cup fat-free sour cream or Greek yogurt (I prefer sour cream)
  • 1/2 cup Franks red hot sauce (or whatever hot sauce you like)
  • 1/2 cup crumbled blue cheese
  • 1 teaspoon white vinegar
  • scallions (optional for garnish)

How to cook:
  1. Slow Cooker Buffalo Chicken Dip Recipe:
  2. To make the shredded chicken, place chicken in the slow cooker and add enough water or chicken broth to cover. Cook high 4 hours. Remove and shred with two forks, discard the liquid.
  3. Meanwhile, combine the cream cheese, sour cream, vinegar and hot sauce together until smooth. Add half of the blue cheese.
  4. Transfer to the slow cooker with the chicken, mixing well and return to the slow cooker, cook low 2 to 3 hours.
  5. Transfer to a serving dish and top with the remaining blue cheese, garnish with scallions. Serve hot.
  6. Faster Oven Method with a Rotisserie Chicken:
  7. Buy a a *rotisserie chicken and remove the breast meat from the bones, removing the skin and shred.
  8. Preheat the oven to 350F. Place chicken in a large bowl, then mix the cream cheese, sour cream, vinegar and hot sauce together until smooth. Add half of the blue cheese and place them in a baking dish. Bake 350F until hot, about 20 to 25 minutes.
  9. Instant Pot Method:
  10. You can cook the chicken breast in the Instant Pot covered in 1 1/2 cups water or broth 15 min high pressure. Once you shred and drain set the instant pot to the slow cooker mode, combine the ingredients and proceed with above directions.

  • 2 Tbs shredded Monterey Jack cheese (or cheddar if you prefer)
  • 1/2 Tbs crumbled blue cheese (optional – if you don’t like blue cheese, you can always skip it and add an extra Tbs of Monterey jack to your dip!)
