Ingredients:
  • 1 pound Camellia Brand Large Lima Beans (Butter Beans)
  • 1 1/2 cups water
  • 1/2 teaspoon apple cider vinegar
  • 1/2 pound raw shrimp, peeled and deveined
  • 1 teaspoon parsley flakes
  • 1/2 teaspoon hot sauce
  • 1/2 teaspoon paprika
  • 1 teaspoon garlic powder
  • 12 ounces gluten free chicken sausage
  • 1 tablespoon butter or oil
  • 3 to 5 tablespoons butter or oil
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 2 celery ribs, chopped
  • 3 garlic cloves, minced
  • 3 cups gluten free chicken broth
  • 1 teaspoon parsley flakes
  • 1/2 teaspoon paprika
  • 3 cups water
  • salt, black pepper, and cayenne pepper to taste
  • hot sauce to taste
How to cook:
  1. Rinse and soak butter beans. Pour beans, water and apple cider vinegar into a medium-sized bowl with a fitted lid. Refrigerate overnight.
  2. Season the shrimp with the garlic powder, paprika, hot sauce and parsley flakes. Cover and refrigerate until ready to use.
  3. Slice sausage, and brown in an enameled cast iron Dutch oven.
  4. Remove each piece of sausage when browned, transferring to a plate covered with paper towels.
  5. Add more butter or oil to the Dutch oven, and brown the Cajun trinity of onion, bell pepper and celery, adding more butter if necessary throughout the browning process.
  6. Stir the minced garlic cloves into the pot, and cook for 1 additional minute, or until slightly browned and fragrant.
  7. Drain the butter beans in a colander.
  8. Pour the browned sausage, drained butter beans, chicken broth, water, parsley flakes, paprika, and salt, pepper, cayenne and hot sauce to taste into the pot.
  9. Simmer the pot over a medium-low fire for 1 1/2 hours, or until the beans are very tender.
  10. Add the seasoned shrimp. Cook for an additional 10 minutes, or until shrimp are opaque.

Butter Beans Southern-Style

Ingredients:
  • 6 ounces salt pork (6 thick slices)
  • 1 pound large lima beans
  • 1 teaspoon salt
  • 1/2 teaspoon fresh ground pepper
How to cook:
  1. Rinse and drain beans.
  2. Put salt pork slices in the bottom of a large 7 to 8 quart pot. Pour the beans on top.
  3. Cover the beans with about a half-inch of water.
  4. Bring to a slow boil and reduce the heat to simmer. Do not let get to a full rolling boil.
  5. Cover the pot loosely. Check every 20 to 25 minutes and add more water just to cover the beans.
  6. After 1 to 1 1/2 hours, add 1 teaspoon of salt.
  7. Continue to simmer, adding more water as needed, until beans are soft, about 2 1/2 to 3 hours.
  8. Remove and discard salt pork slices.
  9. Add pepper and gently stir. Taste and adjust seasoning with salt and pepper.

  • 1 large onion, finely chopped

  • 1 lb smoked sausage or 1 lb kielbasa, sliced

How to cook:
