Crunchy Fudge Sandwiches

A chocolatey fudge center sandwiched right in between the butterscotchy, peanut-buttery, crispy, crunchiness of Rice Krispies Treats®.

Ingredients:
- 1 cup butterscotch morsels
- 1/2 cup peanut butter
- 4 cups Kellogg's® Rice Krispies® cereal
- 1 package (6 oz.) semi-sweet chocolate morsels
- 1/2 cup powdered sugar
- 2 tablespoons butter or margarine, softened
- 1 tablespoon water
How to cook:
- Directions
- 1. Melt butterscotch morsels with peanut butter in heavy saucepan over very low heat, stirring constantly until well blended. Remove from heat.
- 2. Add KELLOGG'S RICE KRISPIES cereal to butterscotch mixture, stirring until well coated. Press half of cereal mixture into 8 x 8 x 2-inch pan coated with cooking spray. Chill in refrigerator while preparing filling. Set remaining cereal mixture aside.
- 3. Combine chocolate morsels, powdered sugar, butter and water. Stir over very low heat until chocolate melts and mixture is well blended. Spread over chilled cereal mixture. Spread remaining cereal mixture evenly over top. Press in gently. Chill. Remove from refrigerator for about 10 minutes before cutting into squares.

- 6 ounces butterscotch chips
- ½ cup creamy peanut butter
- 4 cups puffed rice cereal (, (i.e.) Rice Krispies)
- 6 ounces semi-sweet chocolate chips
- ½ cup powdered sugar
- 2 Tablespoons butter, softened
- 1 Tablespoon water

- Layer #1-Butterscotch Krispy- In large saucepan, cook butterscotch chips and peanut butter on LOW heat until melted, stirring often. Remove pan from heat; add crisped rice cereal. Stir well, to combine until all cereal is coated. While warm, divide mixture in half. Press HALF of the mixture into a well buttered or greased dish, (setting aside other half of mixture in saucepan for later-Layer #3). Firmly press mixture down into dish to form solid layer. Set dish in freezer to chill/solidify.
- Layer #2 Chocolate- Use double boiler OR place small pan with chocolate chips on top of larger pan (half full of gently boiling water) on stove. Small pan will "rest" on top of hot water in larger pan. Don't let water from the bottom pan get into chocolate chips. Stir chocolate until melted; remove pan from heat. Immediately stir in powdered sugar, butter and water, stirring until smooth. Remove dish with krispy layer from freezer; spread chocolate on top to fully cover.
- Layer #3 Reserved Krispy Mixture- Take reserved butterscotch krispy mixture; spread it out to cover chocolate. Press krispy mixture together to form firm top layer. Chill bars in refrigerator until very firm (approx. 30 minutes).
- Serve- Cut chilled bars into 16 servings (or 32, if doubling recipe), serve, and enjoy. Store leftovers (covered) at room temp.

- 10 ounces miniature marshmallows
- 5 cups rice krispies cereal
- 1/4 cup creamy peanut butter
- 1/4 cup butterscotch chips
- 1/2 cup chopped Butterfinger candy bars*
- 1/4 cup melted chocolate for drizzling
How to cook:
- Place the marshmallows, peanut butter, and butterscotch chips in a large microwave safe bowl. Microwave for 1 minute. Mix well until everything is melted and smooth.
- Use a large rubber spatula to mix in the cereal. Add the Butterfinger candy pieces (it's ok if the chocolate melts a little, but try to stir as little as possible to keep it from melting completely).
- Scrape the mixture into a parchment lined or well greased 8x8 baking dish. Gently press flat.
- Drizzle melted chocolate over top. Let chocolate cool completely and harden before cutting into squares to serve.

- 1/3 cup soft caramels (each chopped into 4 pieces)
- 1 tablespoon gold + white sprinkles

- Line an 8 by 8-inch baking dish with 2 pieces of parchment paper so it hangs over all 4 sides. Lightly spray the inside with coconut oil spray.
- Add the butter to a medium saucepan over medium heat. Once it starts to melt, add the marshmallows and cook until they’re about 3/4 of the way melted, stirring occasionally.
- Remove from the heat and stir in the vanilla extract, butterscotch extract, and salt.
- Pour the Rice Krispies cereal into a large bowl. Pour the marshmallow mixture on top, and stir to combine. Stir in the chopped caramel.
- Transfer the mixture to the prepared baking dish and use an oiled metal spatula to spread it out evenly. Sprinkle the gold + white sprinkles on top.
- Cool completely before cutting with an oiled knife.
