Ingredients:
- Cooking spray or butter, for the pan
- 1 cup light corn syrup
- 1 cup sugar
- 1 cup creamy peanut butter
- 6 cups Rice Krispies cereal
- 1 cup butterscotch chips
- 1 cup semisweet chocolate chips
How to cook:
- Line a 13x9-inch pan with parchment and lightly grease the parchment.
- In a small saucepan, stir the corn syrup and sugar to form a grainy paste. Bring to a boil and cook until the sugar dissolves and large bubbles form across the surface. Remove from the heat and quickly stir in the peanut butter.
- Place the Rice Krispies in a large bowl and pour the peanut butter mixture over top. Stir to coat evenly. Pour the cereal mixture into the prepared pan.
- Wet your hands and press the cereal mixture evenly and firmly into the pan.
- In a medium heatproof bowl, microwave the butterscotch chips and chocolate chips in 30-second increments until melted and smooth. Stir between each 30-second increments (it usually takes a total of about 1½ minutes).
- Pour the chocolate mixture over the top of the cereal. Use a spatula to smooth the chocolate layer.
- Let the bars cool at room temperature or in the refrigerator for at least 1 hour to firm up. Slice and eat!

- Butter the bottom and sides of a 9X13-inch pan. Set aside.
- In a large saucepan, melt the butter on low heat and let it cook until the solids start to turn golden brown and it smells caramelly and fragrant (here's a browned butter how-to if you'd like a visual).
- Add the marshmallows and cook on low, stirring constantly until mostly melted, a few small lumps here and there are ok. Add the vanilla and salt and stir to combine.
- Remove the pan from the heat and add the rice krispies and butterscotch chips. Stir until evenly combined.
- Scrape the mixture into the prepared pan and using lightly greased or barely wet (with cold water) hands, lightly press the mixture into the pan (mashing them too hard and you'll end up with very firm rice krispie treats - so use a gentle hand if you want them chewy). Let cool before slicing into squares.
