Ingredients:
- 2 medium leeks, white and light green parts only
- 1 tablespoon extra-virgin olive oil
- 1 medium yellow onion, diced small
- 2 medium carrots, diced small
- 2 celery stalks, diced small
- 2 garlic cloves, minced
- 1 medium Yukon Gold potato, peeled and diced small
- 6 cups low-sodium chicken broth
- 2 bay leaves
- 1/2 head (1 1/2 pounds) green cabbage, cored and thinly sliced
- Coarse salt and ground pepper
- 2 teaspoons white vinegar
- 1 tablespoon chopped fresh thyme leaves
How to cook:
- Halve leeks lengthwise; rinse thoroughly, pat dry, and cut into 1/2-inch slices. In a large Dutch oven or heavy pot, heat oil over medium-high. Add onion, carrots, and celery; cook, stirring occasionally, until softened, about 5 minutes. Add leeks and garlic and cook, stirring, until leeks begin to soften, 2 minutes. Add potato, broth, and bay leaves and bring to a boil. Stir in cabbage and season generously with salt and pepper.
- Return soup to a boil, then reduce to a rapid simmer. Cover and cook until vegetables are tender, 15 to 20 minutes. Remove from heat; stir in vinegar and thyme. Season with salt and pepper.

- 1 medium onion (diced)
- 2 carrots (sliced)

- 1 quart vegetable broth
- 1 cup water
- 1 18 oz diced tomatoes (jar )
- 1 zucchini (chopped)
- 2 potatoes (peeled and diced)

- Heat olive oil in a large pot over medium-high heat. Once the pan is hot add onions, carrots, celery, and garlic, saute 4-6 minutes.
- Add in vegetable broth, water, tomatoes with liquid, zucchini, potatoes, bay leaves, thyme and season with salt and pepper to taste.
- While the veggies are cooking in the broth chop up the cabbage and then add to the pot.
- Cover and bring to a boil, then reduce the heat to medium-low.
- Cover and simmer the soup for 25-30 minutes or until potatoes are tender.
- Serve with your favorite main course or enjoy as is with some crusty bread.

- 1 medium red cabbage
- cored and cut into medium chunks 4 dates
- pitted 1 tsp sea salt 1/4 cup apple cider vinegar 1 large carrot cut into 2-inch pieces olive oil or pumpkin seed oil (to taste)
How to cook:
- Cut about 1 cup of the cabbage into thin strips (for topping) and set aside.In a large pot, add in the rest of the cabbage, dates, sea salt, vinegar, and carrots and bring to a boil. Lower the temperature to a simmer, cover the pot and cook for about 20 minutes.Put all contents into a blender and puree until smooth. Top with shredded cabbage and drizzle with oil.
