How to cook:
  1. Apple Juice Pound Cake
  2. Pre-heat oven to 325°F.
  3. Grease a bundt pan with melted butter and sprinkle with a little flour.
  4. In a mixing bowl, cream butter and sugar.
  5. Add in eggs 1 at a time.
  6. In a separate bowl mix the dry ingredients.
  7. Slowly add dry ingredients to the wet ingredients.
  8. Slowly add in the extract and apple juice.
  9. Mix and fill greased bundt with batter.
  10. Bake for 65-70 minutes or until a toothpick inserted in the center comes out clean.
  11. Allow cake to completely cool before icing.

  • 1 cup Water
  • 1/2 cup Milk (2% or Whole)
  • 1/3 cup Oil
  • 1 box Yellow cake mix (Any brand is fine)
  • 5 Apples (Washed, Peeled, Cored, Roughly chopped into 1.5 inch pieces)
  • 3 tbsp Brown sugar
  • 1 tsp Cinnamon powder
  • 1/2 tsp Nutmeg powder
  • 1 tbsp Lemon juice

How to cook:
  1. In a mixing bowl, add eggs, water, milk, oil and mix everything until smooth.
  2. Add cake mix powder and mix until just combined. There might be some lumps but don't worry about them and don't over-mix!
  3. Pour about 3/4 of the batter batter in a greased and floured rectangle cake pan (Dimension: 9x13).
  4. In another mixing bowl, add apples, brown sugar, cinnamon, nutmeg, lemon juice and mix until apples are fully coated.
  5. Spread these apples on top of the cake batter.
  6. Pour the remaining cake batter on top. It won't fully cover the apples and that's perfectly fine.
  7. In another bowl, make the topping by mixing together together the flour, coconut, brown sugar, butter with a fork until you have a crumbly mixture.
  8. Sprinkle this topping over the apples and cake batter.
  9. Bake at 350 degrees for about 45 minutes or until an inserted toothpick in the center comes out clean.
  10. Let it cool down completely.
  11. While the cake is cooling prepare the sugar glaze by whisking together powdered sugar, milk and vanilla extract until it's smooth and perfect for drizzling. If you want the drizzle thinner, add more milk. If you want it thicker, add more powdered sugar.
  12. Drizzle the glaze on top of the cake and enjoy.

  • 2 or 3 large organic apples, about (300g), washed and cut into pieces (do not peel, but remove the core/seeds)
  • 2 Tbsp lemon juice
  • 3 eggs
  • 1 1/8 c (250g) sugar
  • 1 3/4 c (275g) all purpose flour (plain flour in the UK)
  • 2 1/2 tsp baking powder (or 1 packet Italian Paneangeli vanilla baking powder)
  • 1/3 c (100g) butter, softened
  • 1/3 c (110g) plain Greek yogurt
  • 1 Tbsp grated fresh lemon zest/peel

How to cook:
  1. Prepare an 8″ springform pan by spraying with oil (or butter) and lining in parchment paper (sides optional, if you want really clean sides), then spray the paper, too.
  2. In a food processor, or blender, process the apple pieces and lemon juice until it is almost pureed.
  3. Place the sugar and eggs in a large bowl and beat with a mixer until light and fluffy. Sift the flour with the baking powder then add to the mixture in the bowl a little at a time along with the softened butter. Continue to mix until completely blended, then stir in the yogurt.
  4. Add the processed apples and grated lemon rind to the cake batter and stir until evenly combined.
  5. Pour into prepared cake tin.
  6. Bake for 50-60 minutes (depending on your oven), but test with a cake tester or skewer to make sure the apple cake is done before removing from the oven. If desired, sprinkle lightly with some granulated sugar immediately. Allow to cool for about 15 minutes, then remove the side of the springform pan.
  7. Let cool completely before cutting and serving.
  8. The cake can stand on its own, but you can also serve it with a fruit sauce, dollop of whipped cream, custard or vanilla ice cream. I prefer it plain with a cup of tea!

  • 3/4 cup pineapple juice

How to cook:
  1. Preheat the oven to 325°F and grease and flour a 10 to 12-cup Bundt pan.
  2. Use an electric mixer to combine the cake mix, vegetable oil, pineapple juice, and eggs in a large bowl. Beat about 2 minutes. Pour the batter into the prepared pan.
  3. Bake for 30 to 35 minutes or until a toothpick inserted in the center comes out clean and the cake is just starting to pull away from the sides. Allow the cake to start to cool in the pan while you make the glaze.
  4. In a small sauce pan, combine the powdered sugar, pineapple juice, and butter. Cook over medium-low heat until the butter has melted, stirring frequently.
  5. Use a skewer or toothpick to poke holes in the cake. Pour the warm glaze over the cake while it is still in the cake pan. It's going to seem like a lot of glaze, but just keep pouring. Allow to cool for 15 to 20 more minutes, or until the cake is cool and most of the glaze has been absorbed, then invert the cake onto a serving platter.
