Ingredients:
  • 1/2 cup Flour
  • 1/3 cup brown sugar
  • 1/4 cup white sugar
  • pinch of salt
  • 1 level teaspoon Cinnamon
  • 4 tablespoons butter (cubed)
  • 1 white cake mix
  • 1 Egg
  • 8 oz. sour cream or plain greek yogurt
  • 1/4 cup melted butter
  • 1 teaspoon vanilla bean paste or vanilla extract
How to cook:
  1. Preheat oven to 350 degrees F.
  2. Combine the streusel ingredients in a bowl.
  3. Using a fork, your fingers, or an electric mixer, combine the streusel ingredients. It should look like course sand.
  4. Set the streusel aside.
  5. In a mixing bowl, combine cake mix, egg, sour cream, melted butter, and vanilla.
  6. Combine quick bread ingredients with an electric mixer, scraping sides and bottom of bowl.
  7. Beat until smooth.
  8. Fill four mini loaf pans with the batter and spread to the sides of the pans. Batter will be stiff. (It's helpful to use a large cookie scoop to put the batter into the pans.)
  9. Top each loaf with streusel.
  10. Bake for 40 minutes.
  11. Bread is done when a knife inserted in the middle comes out clean.
  12. Cool, slice, and serve.

Snickerdoodle Cake Mix Quick Bread
A delicious cinnamon swirl breakfast bread that starts with a yellow cake mix!

Ingredients:
  • 1 (15.25 ounce) yellow cake mix
  • 2 teaspoons ground cinnamon
  • ½ cup vegetable oil
  • 1 cup sour cream
  • 4 large eggs
  • 1/3 cup granulated sugar
  • 2 teaspoons ground cinnamon
  • 2 ounces cream cheese
  • 1 cup powdered sugar
  • 1 tablespoon water or milk
How to cook:
  1. Preheat oven to 350°.
  2. Spray a 9x5 loaf pan with non stick cooking spray.
  3. Add a strip of parchment paper length wise, spray the paper, add another strip of parchment paper width wise and spray the paper. Set aside. TIP: The strips of parchment paper should sit on the bottom of the pan and not up the sides.
  4. In a medium mixing bowl add the cake mix, cinnamon, oil, sour cream and eggs.
  5. Mix until combined.
  6. Pour half of the batter into the prepared pan, smooth to the edges.
  7. Sprinkle 3 tablespoons of the cinnamon swirl mixture on top of the batter.
  8. Carefully add remaining batter on top, spread to the edges and sprinkle on remaining cinnamon swirl mixture.
  9. With a butter knife swirl the cinnamon sugar mixture, making sure to include the center mixture in the swirl motion.
  10. Bake 47 minutes or until a wooden toothpick inserted into the center comes out clean.
  11. Cool in pan on a wire cooling rack 10 minutes.
  12. Remove from the pan and cool completely on cooling rack.
  13. In a back and forth motion add the cream cheese drizzle.
  14. In a small bowl, add the sugar and cinnamon.
  15. Stir to combine.
  16. Place cream cheese in a medium microwave safe bowl.
  17. Heat 30 seconds or until soft.
  18. To the same bowl, add the powdered sugar and water or milk.
  19. Stir until combined—drizzle should be loose and fall from the spoon.

How to cook:
  1. Heat oven to 350°F. Grease and flour bottoms only of two 8x4-inch loaf pans.
  2. In large bowl, beat cake mix, dry pudding mix, water, oil and eggs with electric mixer on medium speed 2 minutes, scraping bowl occasionally. Stir in 1/4 cup of the sprinkles. Divide batter evenly between pans.
  3. Bake 45 to 50 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; run metal spatula around edge of loaves to loosen. Remove from pans to cooling rack. Cool completely, about 1 hour.
  4. Spread frosting on tops of loaves; sprinkle with remaining sprinkles. When ready to serve, cut into slices.
