This classic French Onion Soup is made easy using Campbell's Ready-To-Use beef broth, onions, red wine, balsamic vinegar, Gruyere cheese & Parmesan cheese.

  • 1/4 cup 60 mL unsalted butter
  • 3 each large onions, thinly sliced
  • 2 dried bay leaf
  • 1/2 tsp 3 mL fresh thyme leaves, chopped
  • 2 tbsp 30 mL all-purpose flour
  • 1/2 cup 125 mL red wine
  • 1 tbsp 15 mL balsamic vinegar
  • 1 carton (900 mL) CAMPBELL’S® Ready to Use Beef Broth
  • 1/2 tsp 3 mL black pepper
  • 1 French baguette, 1/2” bread slices, toasted
  • 1/2 lb 227 g Gruyère cheese, shredded
  • 3 tbsp 45 mL Parmesan cheese, grated

How to cook:
  1. In a large stock pot, melt the butter on medium heat. Add the sliced onions and bay leaves and sauté until the onions are golden brown.
  2. Add the thyme and flour and continue to sauté for 3 minutes. Add the red wine and balsamic vinegar and cook for 2 more minutes or until the wine evaporates.
  3. Add the beef broth and black pepper and continue to cook for 15 minutes.
  4. Portion the soup into 6 oven proof bowl. Place two slices of the toasted baguette slices on top, cover with Gruyere cheese and parmesan cheese.
  5. Broil in the oven until the cheese bubbles and turns golden brown.

Ingredients:
  • ¼ cup butter
  • 3 large onions (sliced thin)
  • 2 bay leaves
  • ½ tsp thyme
  • 2 Tbsp all-purpose flour
  • ½ cup red wine
  • 1 Tbsp balsamic vinegar
  • 32 oz beef broth
  • ½ tsp black pepper
  • French baguette (cut into slices)
  • Shredded cheese (gruyere or mozzarella work well.)
How to cook:
  1. In a large soup pot, add your butter and allow it to melt over medium-low heat. Next, add the thinly sliced onions and bay leaves. Sauté over medium-low heat until onions begin to turn a golden-brown color.
  2. When onions are sautéed, sprinkle thyme into the pot, then sprinkle all-purpose flour over the onions. Stir until the onions are completely coated in flour. Continue cooking for about three minutes.
  3. Next, add red wine and balsamic vinegar to the pot. Cook over medium-low heat until the wine has completely evaporated, stirring occasionally.
  4. When the wine has completely evaporated, add your beef broth to the pot. Stir so that everything is mixed. Allow the soup to simmer while covered on low heat until shortly before you are ready to serve.
  5. Right before you’re ready to serve, dish the soup into your serving dishes. Add slices of baguette to the top of your soup, then sprinkle shredded cheese on top. Place it into the oven on a low broil. Broil for about five minutes, or until the cheese has turned a golden brown and has melted. Please note that the amount of time on broil may vary depending upon your specific oven. Be sure to keep a close eye on it so that your soup does not burn.
