A great-grandmothers recipe unlike any other. Better than chocolate chip and a less-sweet alternative to boot! Keep these lighter in color and you will have a warmer reception from friends and family.

  • 16 ounces Chopped dates
  • 1/2 cup Granulated sugar
  • 1/2 cup Water
  • 2 sticks Unsalted butter
  • 1 cup Granulated sugar
  • 1 cup Brown sugar

  • 4 cups All purpose flour
  • 1 teaspoon Baking soda

How to cook:
  1. Combine dates, 1/2c sugar and water. Cook stirring occasionally until the consistency of thick jam. Set aside and cool.
  2. Cream the butter and sugars adding gradually until light and fluffy.
  3. Beat in eggs and vanilla.
  4. Sift dry ingredients and add to the creamed mixture.
  5. Stir in date mixture and nuts. Works best by hand. It’s quite thick for a dough!
  6. Cook at 375* for 12-15 minutes until lightly browned.

  • 12 tbsp butter (unsalted)
  • 2¼ cups flour (all purpose or whole wheat pastry)
  • 1/3 cup brown sugar (light)
  • 1/4 tsp salt
  • 1½ cups medjool dates (pitted)
  • 1 cup dried apricots (or dates)
  • 1 cup prunes ( or dates, pitted)
  • 1/2 cup raisins (or dates, pitted)
  • 1/2 cup maple syrup
  • 1/2 cup coconut milk (adjust as needed)
  • 1 tsp vanilla (or flavoring of choice)
  • 1 pinch salt
  • 1/2 cup walnuts (chopped)

How to cook:
  1. Preheat oven to 375 degrees F.
  2. Melt the butter in a saucepan and simmer at a low setting. Let the milk solids settled at the bottom of pan toast to a light brown. Cool the brown butter.
  3. In a mixing bowl combine brown butter, sugar, flour, salt and mix it up well until crumbly. Press the crumb mixture evenly onto a 14 X 9 inch baking sheet that is lined with parchment paper. Tip: Use half recipe for a 8 x 8 inch square pan.
  4. Bake the shortbread layer for about 15 to 18 minutes until very light brown. Let cool.
  5. Meanwhile chop the dates, apricots and prunes. Process all the dried fruits, maple syrup, coconut milk and pinch of salt in a food processor to a smooth paste. Tip: Adjust the amount of coconut milk as needed, to make a thick but spreadable paste.
  6. Dollop the dried fruit mixture all over the shortbread base and using a flat spatula spread it evenly into a layer.
  7. Scatter the chopped nuts and coconut flakes over the dried fruit layer and bake for about 15 to 18 minutes until few of the coconut flakes start turning a light brown.
  8. Let the date bar cookies cool completely before cutting them into squares with a sharp knife.
  9. Store in an airtight container.

  • 1 cup dates,, pitted and soaked for 1 hour
  • 2 cups assorted nuts,, pecans, walnuts, almonds, hazelnuts, etc.
  • 2 teaspoons pure vanilla extract
  • 4 tablespoons filtered water
  • unsweetened coconut flakes,, optional for rolling

How to cook:
  1. Preheat the oven to 350°
  2. Cover a baking sheet with parchment paper.
  3. Spread the assorted nuts onto the baking sheet, making as much of a single layer as possible.
  4. Toast the nuts for ten minutes.
  5. Remove the water from the dates and the dates to the bowl of a food processor.
  6. Add one cup of the nuts and pulse a few times.
  7. Add the pure vanilla extract and 2 tablespoons of the water.
  8. Pulse again until the ingredients are pulverized. Use a spatula to mix the ingredients around if large pieces get stuck under the blade.
  9. Add the remaining one cup of nuts and two tablespoons of water.
  10. Pulse again until a thick cookie-like dough forms.
  11. Roll the dough into balls slightly smaller than a golf ball.
  12. Line the balls on a plate and place in the fridge for 2 hours until the cookies set.
  13. Roll in the coconut flakes just before serving, if desired.

How to cook:

  2. Line a baking tray with baking paper
  3. Process the dates for a few seconds to break them up. Doesnt need to be be smooth, unless your kids are fussy about date bits - in that case you can process to a paste.
  4. Add remaining ingredients (beanut butter, nuts, honey and eggs)and process to a chunky mix. See my image in the blog post above for idea on consistency)
  5. Spoon walnut size amounts onto the baking paper. Bake for 20 minutes @ 150C/300F. Keep an eye on the cookies in the final minutes of baking to prevent th nuts over browning.
  6. Allow to cook completely before storing.
