Ingredients:
  • 1 cauliflower head about 2 pounds or 2 pounds of ready to cook riced cauliflower
  • 3 eggs
  • 8 ounces (1 cup) of fresh or frozen uncooked shrimp
  • 8 ounces (1 cup) of ham cut into 1 inch cubes or sliced ham chopped into bite sizes
  • 1 cup of scallions finally chopped , about 6 scallions
  • 1/2 pound of raw chicken breast (1-inch cubes)
  • 1 cup sliced up mushrooms , your choice I used baby belle
  • 1 cup of fresh zucchini chopped into small pieces
  • 8 ounces (1 cup) bean sprouts
  • 2 garlic cloves crushed
  • Black pepper to taste
  • ¼ cup of sesame seed oil of choice to saute with
  • Asian powder seasoning to taste ( Pampered Chef Asian Seasoning)
  • ¾ cup of soy sauce or to taste (note that the addition of salt is not needed due to the soy sauce)

How to cook:
  1. Start by making the cauliflower rice or pulling the frozen cauliflower of the freezer.
  2. If making your own cauliflower rice you can do so by chopping the whole cauliflower into eight even pieces and then using a box grater rice grate the cauliflower or use a food processor fitted with a grating disk.
  3. You can also use frozen cauliflower for added convenience and there is no need to defrost if doing so.
  4. In a very hot large skillet or wok place the sesame seed oil or oil of choice.
  5. Cook the chicken breast chunks, set aside
  6. Proceed to cook the ham, shrimp, and then set aside.
  7. Next add the diced vegetables, bean sprouts, scallions, and garlic until well sautéed.
  8. Put all cooked ingredients in a mixing bowl and set aside.
  9. Scramble the three eggs and place in mixing bowl with the cooked ham, and vegetables.
  10. Then once all is cooked put all the ingredients back in the wok and add the raw cauliflower allowing it to steam lightly.
  11. Sprinkle the Asian seasoning and the soy sauce and combine until fully incorporated.

How to cook:
  1. In a high speed blender or food processor, add your chopped cauliflower and pulse until a rice-like consistency. Set aside.
  2. In a large wok or frying pan, add your oil and place over medium heat. Once hot, add your onions and garlic and fry for 1-2 minutes, before adding your carrots, peppers, frozen peas, and riced cauliflower and cook for 3-4 minutes, until softened.
  3. Push the vegetables to one side and add the sesame oil then add the eggs and gently scramble them. Mix them through the vegetables.
  4. Add the soy sauce stir fry for 1-2 minutes, before removing the pan off the heat.

  • 2 tbsp butter, ghee or coconut oil

How to cook:
  1. Prepare the cauliflower rice by pulsing the florets in a food processor until they reach arice consistency.
  2. Place a sauté pan or wok on a medium heat. Add the butter and stir fry the peppers, ginger, garlic and whites of the spring onions / scallions for 3 minutes.
  3. Add the cauliflower and fry for a further 3 minutes, stirring regularly. Mix through the coconut aminos (or soy sauce / tamari) and salt. Push the cauliflower rice to one side of the pan and add the whisked eggs. Season eggs with a pinch of salt and pepper.
  4. Scramble for approximately 1 minute, or until cooked to your liking, and then mix with therest of the ingredients. Stir through sesame oil and remove from the heat. Top with the green part of the onions, check the seasoning and adjust to taste.

How to cook:
  1. Heat 2 tbsp of olive oil on medium-high heat
  2. Crack 3 eggs into the pan (it should look like you are making sunny side up eggs)
  3. Add green onions to pan and use a spatula to scramble the eggs and green onions (~1 minute to ensure egg is fully cooked)
  4. Add cauliflower rice (and frozen mixed vegetables, if you are using) to the skillet along with remaining olive oil, fish sauce and coconut aminos
  5. Mix with a spatula until rice is tender and all the liquid clears (10 - 12 minutes). Some of the riced cauliflower will look browned and toasted.
