Shrimp Fried Cauliflower Rice
This shrimp fried cauliflower rice is easy, flavorful, and healthy. Cook up an easy lunch or dinner in no time!

  • 1 tbsp Avocado Oil
  • 1 lb Shrimp (large, uncooked, shell-off)
  • Salt & Pepper (to taste)
  • 2 tsp Ginger (I used frozen cubes, but can use fresh grated ginger)
  • 2 cloves Garlic (minced)
  • 1 tsp Onion Powder (can substitute about half a diced onion)
  • 1/2 cup Frozen Corn
  • 1 cup Frozen Peas and Carrots
  • 3 cups Riced Cauliflower (I used 1 bag of the Trader Joe's Frozen Riced Cauliflower)
  • 1 tbsp Butter
  • 4 Eggs (beaten)
  • 4 tbsp Soy Sauce
  • 2 tbsp Sesame Oil
  • 1/2 tsp Ground Ginger
  • 1/2 tsp Garlic Powder
  • 1/2 tsp White Pepper
  • Sriracha, Green Onions (to serve, optional )
How to cook:
  1. Heat avocado oil in wok or large skillet over medium high heat. Season shrimp with salt & pepper and add to wok. Cook for about 2 minutes a side until shrimp are pink. Remove shrimp from the wok.
  2. Add fresh ginger, garlic, and onion powder to the wok and combine. Cook for 2-3 minutes.
  3. Add corn, peas & carrots, and riced cauliflower to the wok. Combine and cook for 3 minutes, stirring often.
  4. Move the vegetables to one side of the wok. Add butter to the other side of the wok. Pour in beaten eggs over the butter. Scramble the eggs then mix them into the vegetables.
  5. In a small bowl, combine soy sauce, sesame oil, ground ginger, garlic powder, and white pepper. Pour into the wok and combine well.
  6. Add shrimp back into the wok. Optionally, top with sriracha and sliced green onions. Serve immediatly.

  • 1 lb. frozen, raw shrimp, thawed, tails removed
  • 2 tsp. minced garlic
  • 1/2 tsp. red pepper flakes
  • 3 Tbsp. olive oil, divided
  • 2 eggs
  • 3 green onions, sliced
  • 1 c. frozen peas & carrots
  • 2/3 c. red bell pepper, chopped (about 1/2 pepper)
  • 1 pkg. frozen riced cauliflower (about 3 cups)
  • 2 Tbsp. low-sodium soy sauce
  • Salt & Pepper to taste

How to cook:
  1. In a large skillet or wok, add 2 Tbsp of olive oil, and heat over medium-high heat. Add the thawed shrimp, garlic and red pepper flakes. Saute for approximately 5 minutes or until the shrimp becomes pink and cooked through on both sides. Transfer the cooked shrimp to a bowl to keep warm.
  2. In the same skillet, add the two eggs and scramble over medium heat. Transfer the scrambled eggs to the bowl with the shrimp to keep warm. Scrape out any remaining eggs from the skillet.
  3. Add the last tablespoon of olive oil. Add the bell pepper, onions, peas and carrots. Saute for approximately 5 minutes or until cooked through. Add the frozen riced cauliflower, and saute for 5 more minutes or until heated through. Add salt and pepper to season.
  4. Add the shrimp and eggs to the skillet with the rice and vegetable mixture. Top with the soy sauce and stir. Heat through for another minute or two.
  5. Serve and enjoy right away while hot.

  • 1 pound medium-size peeled deveined raw shrimp
  • 1 medium-large cauliflower head
  • 1½ cups chopped red bell pepper
  • 2 large scallions (green onion) (white and green portions sliced)
  • 1 cup chopped carrots
  • 1 cup chopped yellow onion
  • 3 cloves garlic (diced)
  • 2 teaspoons diced ginger

How to cook:
  1. Make the cauliflower rice
  2. Rinse the head of cauliflower and pat dry. Cut into florets and discard any green leaves or stem.
  3. Place florets in the bowl of a food processor and pulse to process into rice size pieces.
  4. Remove excess liquid from the riced cauliflower by placing the cauliflower rice into a mixing bowl and pressing on it with a few layers or paper towels. Or place the cauliflower rice in a clean kitchen towel and squeeze to release the moisture. Set aside.
  5. Stir Fry
  6. In a non-stick wok or large non-stick skillet heat 1 tablespoon of the oil over medium-high heat.
  7. When hot add the shrimp and lightly salt and pepper. Cook, stirring often, until the shrimp are no longer gray and translucent (they should be pink/white and opaque); around 3 minutes. Remove and set aside.
  8. Add the whisked eggs to the pan and scramble over medium-high heat. Remove and set aside. NOTE: if there is residual egg stuck to the pan this can be scraped off with a spatula before the next step (or allow it to cook off).
  9. Add the remaining 1 tablespoon of oil to the pan and heat over high heat.
  10. Add the bell pepper, carrots and onion. Cook for 3 minutes, stirring periodically.
  11. Add the garlic and ginger. Stir to combine and cook 30-60 seconds.
  12. Add the cauliflower rice and stir to combine all ingredients. Cook, stirring often, for 4 minutes.
  13. Add the soy sauce, oyster sauce and green onion. Stir to fully coat the other ingredients in the wok or skillet
  14. Fold in the shrimp and scrambled eggs. Mix to distribute with the other ingredients. Serve immediately topped with a sprinkld of red pepper flakes (if desired).

How to cook:
  1. Gather all the ingredients.
  2. Prepare shrimp by deveining, peeling, drying off any liquid with a paper towel. Cut shrimp into 1/2 inch pieces as shown below.
  3. Mince garlic and chop green onions as shown below.
  4. In a Teflon frying pan or Wok, add 1 tbsp of neutral cooking oil and minced garlic on medium heat. Once the garlic becomes fragrant, about 20-30 seconds, add in chopped shrimp. Cook for 1-2 minutes until pink throughout. Remove from heat and transfer to holding bowl.
  5. In a large Teflon fry pan or Wok, add 1 tbsp of butter and bring up to heat on medium. Once the butter is melted, add in cauliflower rice and cook for 2-3 minutes or until preferred tenderness is attained.
  6. Add back in the cooked shrimp from step 4), mix in Lemon Pepper, Chili Powder and Cayenne Pepper. Cook for an additional 45-60 seconds, then remove from heat and squeeze in lemon juice and chopped green onions. Transfer to a serving bowl and enjoy hot!
