Cajun Red Rice is a classic Lowcountry side dish that's made by cooking long grain white rice in the oven with bacon, onion, garlic and tomato paste. The end result is tender, fluffy rice with rich tomato flavor, a touch of sweetness and a hint of smokiness.

Charleston Red Rice, a simple and comforting dish of baked rice and bacon steeped in rich tomato-ey broth, has a long and winding history. Recipes for the tomato-stained rice can likely be credited to the Lowcountry’s rice-growing slave trade, descendant from similar west African rice dishes such as Jollof and Thieboudienne.

Ingredients:
  • 1 tablespoon olive oil
  • 4 ounces diced bacon
  • 1 cup diced onion
  • 1 cup diced red bell pepper
  • 2 cloves garlic, peeled and thinly sliced
  • 1/4 teaspoon cayenne
  • 1 teaspoon smoked paprika
  • 1/4 cup tomato paste
  • 2 cups Charleston Gold Rice
  • 1 15-ounce can crushed tomatoes
  • 1 1/2 cups unsalted chicken stock
  • 1 tablespoon coarse kosher salt
  • 1 tablespoon chopped fresh parsley
Nutrition:

How to cook:
  1. Preheat oven to 350˚F. 
  2. Rinse rice under cold running water for 1-2 minutes, or until water runs clear; drain. 
  3. Heat olive oil over medium heat in a large pot or Dutch oven. Add bacon and cook until fat has mostly rendered and edges are crispy, about 5 minutes. 
  4. Stir in onion, red bell pepper, and garlic. Reduce heat to medium-low and cook until vegetables are very tender, stirring occasionally, about 8-10 minutes. 
  5. Stir in cayenne, paprika, and tomato paste and cook 1-2 minutes longer. Add rinsed rice and stir to coat thoroughly. Stir in crushed tomatoes, chicken stock, and salt and bring to a simmer over medium heat.
  6. Carefully transfer mixture to a 9x13-inch baking dish and cover tightly with foil. Bake in preheated oven for 45-50 minutes, until rice is tender and edges are lightly caramelized. Remove from oven and let rest, covered, for 5 minutes. Add parsley and fluff with a fork before serving.

Ingredients:
  • 1 lb Roll of Sausage ( (hot preferred))
  • 2 15 oz cans Tomato Sauce
  • 2 Tbsp Dried Chopped Bell Peppers ( (or 1 small pepper diced))
  • 2 Tbsp Dried Minced Onions ( (or 1 small onion diced))
  • Uncooked white rice (enough to fill one tomato sauce can)
How to cook:
  1. Preheat oven to 350 degrees
  2. Place onions and bell peeper in 1 cup of water to rehydrate if using dried.
  3. Fry sausage in cast iron Dutch oven until brown
  4. Stir in all of the other ingredients
  5. Bake for 30 minutes and stir
  6. Cook for an additional 30 minutes.
  7. Stir, serve and enjoy.

  • Non-stick cooking spray
  • 6 bacon slices
  • 1 medium Vidalia or other sweet, Spanish or yellow onion, chopped
  • 2 celery ribs, chopped
  • 1 large green bell pepper, chopped
  • 1 tsp. kosher salt, plus more to taste
  • 2 garlic cloves, minced
  • 2 cups long-grain or Carolina gold rice, rinsed until water runs clear
  • One 14-ounce can tomato purée
  • 1-½ cups chicken stock or water, plus more as needed
  • 1 tbsp. hot sauce
  • 1 tsp. Cajun seasoning
  • 1 tsp. granulated sugar
  • ½ tsp. black pepper
  • Pinch of ground cayenne
  • Parsley leaves, for garnish
How to cook:
  1. Pre-heat oven to 350°F and coat a 9-inch by 13-inch baking dish with cooking spray.
  2. In a 12-inch heavy skillet, over medium heat, fry the bacon until crisp; about 3 minutes per side; remove the bacon to paper towels to drain, leaving behind drippings; crumble the bacon and set aside.
  3. In the same skillet, add the chopped onion, celery, bell pepper and 1 teaspoon salt; sauté until the onion is translucent; about 5 minutes.
  4. Add garlic and sauté until fragrant; another 30 seconds.
  5. To the skillet, add the rinsed rice; stir and toast the rice for 30 seconds.
  6. Add the crumbled bacon, tomato purée, stock, hot sauce, Cajun seasoning, sugar, pepper and cayenne.
  7. Bring the rice and vegetables to a boil; reduce the heat to low and simmer for about 5 minutes; taste and add salt, if needed.
  8. Carefully transfer ingredients to the greased baking dish.
  9. Cover the baking dish tightly with foil; place in pre-heated oven and bake until the rice is tender; about 40 to 50 minutes.
  10. Check the rice after about 30 minutes to make sure all the liquid is absorbed and the rice is tender; if it's too dry or not cooked all the way through, add a few tablespoons of water or stock, if necessary, and cook a little longer.
  11. Fluff with a fork before serving and garnish with parsley leaves.
