Ingredients:
  • 900g/2lb shortcrust pastry
  • 450g/1lb onions, peeled and sliced
  • 450g/1lb mature cheddar, grated
  • 2 tbsp vegetable oil
  • salt and pepper
  • beaten egg for glazing
How to cook:
  1. Heat the oven to 200C/400F/Gas 6.
  2. Roll out the pastry and cut out circles 20cm/8in in diameter.
  3. Heat the oil and cook the onions in it until starting to soften.
  4. Take off the heat and cool. Stir in the grated cheese and season well.
  5. Divide the mixture between the 6 circles and crimp the edges together. Brush with a little of the beaten egg.
  6. Put on a baking sheet and bake in the oven for 20-30 minutes until the pastry is golden. Serve hot or cold.

Cheese & Onion Pasties
This cheese and onion pasties recipe is perfect for a summer picnic. Best eaten hot from the oven, but are also good cold or can be reheated. We've included a classic video below to show you how to make the pastry.

Ingredients:
  • 2 Onion(s) (small, thinly sliced)
  • 1 tbsp Vegetable oil
  • 200g Cheddar cheese (grated)
  • 200g Potato(es) (peeled and finely diced)
  • 300g Allinson's Plain White Flour
  • 75g Butter (unsalted) (cold)
  • 75g Lard (cold)
  • 1 Salt
  • 1 Egg(s) (free range) (beaten)
  • 2 Onion(s) (small, thinly sliced)
  • 1 tbsp Vegetable oil
  • 200g Cheddar cheese (grated)
  • 200g Potato(es) (peeled and finely diced)
  • 300g Allinson's Plain White Flour
  • 75g Butter (unsalted) (cold)
  • 75g Lard (cold)
  • 1 Salt
  • 1 Egg(s) (free range) (beaten)
How to cook:
  1. Step 1:
  2. Fry the sliced onions in the oil for about 5 minutes or until tender . Add the potato and cheese, season well and set aside to cool.
  3. Step 2:
  4. Place the flour in a mixing bowl. Cut the butter and lard into cubes and add to the flour with a pinch of salt.
  5. Step 3:
  6. Using your fingertips rub the butter and lard into the flour until it resembles fine breadcrumbs. ( or even easier- blend it in a food processor)
  7. Step 4:
  8. Add 3-4 tbsp ice cold water, gradually stirring it into the dough with a knife until it just sticks together.
  9. Step 5:
  10. Turn the mixture out on a floured work surface and knead gently into a ball. Cover with cling film and chill in the fridge for 15 minutes if possible. This will help the pastry relax and prevent shrinkage.
  11. Step 6:
  12. Pre heat the oven to 220°C, 200°C fan, gas 7. Roll out the pastry on a lightly floured work surface. Using a saucer, cut out 6 circles (or make 12 smaller pies using a coffee cup saucer) If necessary re-roll the trimmings to make more.
  13. Step 7:
  14. Place a heaped spoonful of the cheese mixture in the centre of each piece of pastry. Brush the edge of half the circle of pastry with a little water, then fold the 2 sides of the circle together to make semi circles. Press down well to seal then place the pasties on a baking tray, sitting them sealed edge upright if liked. Crimp the edges between your fingertips

  16. Brush the pasties with beaten egg. Bake for 25-30 mins until golden and hot.

Cheese and onion pasties, flaky, buttery, and incredibly delicious. Serve as an appetizer or light meal with a green salad. These puff pastry pasties are perfect for entertaining as well. They can be prepared in advance and they can be baked from frozen.

  • 1.2 lb g/ 1.2 lb puff pastry (550 g, Note)
  • 2 tablespoons olive oil
  • 2 large onions (about 350 g/ 12.5 oz total weight)
  • 3/4 cup (generous) grated Cheddar (200 g/ 7 oz)
  • ½ teaspoon fine sea salt (more to taste)
  • 1/8 teaspoon ground black pepper
  • 1 egg yolk
  • 2 tablespoons milk

How to cook:
  1. Cook onions: Peel and halve the onions. Slice into half rings. Heat the oil in a large thick-bottomed or nonstick pan. Cook with a pinch of salt until golden and soft, about 10 minutes. Stir often and don’t allow them to get too brown. If they threaten to catch, turn down the heat slightly and add a small splash of water. Transfer to a bowl and let cool slightly.

  3. Preheat the oven to 200 degrees Celsius/ 400 degrees Fahrenheit.
  4. Make filling
  5. Mix filling: Grate the cheese. Mix with onions, add salt and pepper to taste.
  6. Egg brush: Mix egg yolk and milk in a small bowl. Use to brush the dough around the filling.
  7. Cut pastry
  8. Cut puff pastry: Unroll both sheets of dough on the working surface. Cut rectangles of about 12x15 cm/ 4.5 - 6 inches (Note 2). Place half of the rectangles on a baking tray lined with baking paper.
  9. Fill pasties
  10. Fill, close: Spoon the filling evenly on the pieces leaving some space around the filling. Drape over the remaining pastry rectangles. Press to seal the edges and crimp with a fork. Brush with egg wash. Make a small slit in the middle to allow the hot air to escape during baking.
  11. Bake for about 30-35 minutes until puffed and golden. Leave to cool for 5-10 minutes before serving.
