  • 1 pound ground beef
  • 1 small onion (chopped)
  • 3 cloves garlic (minced)
  • 1 red bell pepper (chopped)
  • 2 cups orzo (uncooked)
  • 2 cups taco skillet sauce
  • 2½ cups chicken broth (low sodium)
  • ½ teaspoon salt (or to taste)
  • ¼ teaspoon pepper (or to taste)
  • 1 tablespoon hot sauce (such as Sriracha)
  • 1 cup cheese (shredded, I used a blend of Mozzarella and Cheddar)

How to cook:
  1. Saute the meat and veggies: Add the ground beef to a large skillet and brown it over medium-high heat until it's no longer pink, breaking it up as you go along. Add the chopped onion and garlic to the skillet and let it cook for about a minute, then add the chopped bell pepper. Stir everything together and cook for about 3 minutes until the onion is translucent and the pepper is tender.
  2. Incorporate the orzo: Add the dry orzo to the skillet and turn the heat down to medium low. Stir in the taco skillet sauce and the chicken broth, season with salt and pepper then add the hot sauce. Cook for about 10 to 12 minutes or until all of the liquid is absorbed, stirring occasionally.
  3. Finish the dish: Stir in the cheese and remove from heat. Alternatively you can top it with cheese, and cover the skillet with a lid until the cheese melts. Top with tomatoes, olives, green onions and fresh cilantro before serving.

How to cook:
  1. Add the ground beef to a soup pot/Dutch oven and break it up a little bit with your spoon. Let it cook, without stirring, over medium-high heat for 5-6 minutes.
  2. Add the onion to the pot and stir/break the beef up into small pieces. Let it cook for another 5 minutes or so. If there's a lot of excess fat (like if you didn't use lean beef), spoon some of it out. Otherwise, leave it in the pot.
  3. Stir in the garlic, red pepper flakes, Italian seasoning, and orzo. Cook for about a minute.
  4. Stir in the tomato sauce, beef broth, cream, and Worcestershire sauce. Once it starts to bubble, continue cooking for 10 minutes, uncovered, stirring fairly often (so the orzo doesn't stick to the bottom of the pot). You will likely need to turn the heat down a bit (to medium or even medium-low). It should gently bubble vs. boil (you don't want the liquid to reduce too much before the pasta has cooked).
  5. Take the pot off the heat, stir in the parmesan and spinach, and cover the pot for about 3-5 minutes or until it has thickened up to your liking. Season with salt & pepper as needed and serve immediately. See more troubleshooting tips in the blog post and notes below.

How to cook:
  1. Turn your Instant Pot to the saute setting. When the display says HOT add in the beef. Break it up with a wooden spoon and brown it. Add in the onions and saute for 3 minutes. Add in the garlic and saute for 30 seconds. Drain off excess grease, if there is any.
  2. Deglaze the pot with the chicken broth/water. Sprinkle in the orzo, green taco sauce, black beans and taco seasoning. Don’t stir.
  3. Cover the pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 1 minute. When the time is up let the pot sit there for 5-10 minutes and then move the valve to venting. Remove the lid.
  4. Stir in the tomatoes, green onions, cilantro, olives and cheddar. Season with additional taco seasoning and salt and pepper, if needed.
  5. Scoop into bowls and top with diced avocado and a dollop of sour cream.

How to cook:
  1. Sprinkle salt into a 10 to 12 inch frying pan over medium-high heat. Crumble beef into pan and cook, stirring often, until meat begins to brown, 3 to 5 minutes. Reduce heat to medium, stir in onion, and continue to cook, stirring, until onion is soft but not brown, about 5 minutes. Spoon off and discard excess fat.
  2. Add garlic, tomatoes (break them up with a spoon) and their liquid, broth, oregano, and pepper. Bring mixture to a boil then stir in pasta. Reduce heat, cover and simmer gently until pasta is tender to bite, 10 to 12 minutes.
