This festive snack mix is the next best thing to drinking a warm cup of hot chocolate on a cold winter day. Chex™ cereal is covered in melted chocolate chips and coated in a powdered sugar and hot cocoa mixture, then tossed with clusters of marshmallows and chocolate nonpareils.

Chocolate Chex® Caramel Crunch

  • 8 cups Chocolate Chex® cereal
  • ¾ cup packed brown sugar
  • 6 tablespoons butter or margarine
  • 3 tablespoons light corn syrup
  • ¼ teaspoon baking soda
  • ¼ cup vanilla baking chips

How to cook:
  1. Into large microwavable bowl, measure cereal; set aside. Line cookie sheet with waxed paper.
  2. In 2-cup microwavable measuring cup, microwave brown sugar, butter and corn syrup uncovered on High 1 to 2 minutes, stirring after 1 minute, until melted and smooth. Stir in baking soda until dissolved. Pour over cereal, stirring until evenly coated. Microwave on High 3 minutes, stirring every minute. Spread on cookie sheet. Cool 10 minutes. Break into bite-size pieces.
  3. In small microwavable bowl, microwave vanilla baking chips uncovered on High about 1 minute 30 seconds or until chips can be stirred smooth (bowl will be hot). Drizzle over snack. Refrigerate until set. Store in tightly covered container.

How to cook:
  1. In a large microwave-safe bowl, mix the cereal and pecans. In a 2-cup glass measuring cup, combine brown sugar, butter, corn syrup and salt; microwave, uncovered, on high until smooth, stirring once, 1-2 minutes.
  2. Whisk in baking soda. Pour over the cereal mixture and toss to coat. Microwave, uncovered, on high for 2 minutes, stirring every minute.
  3. Spread onto a parchment paper-lined baking sheet; immediately sprinkle with chocolate and caramel (do not stir). Refrigerate until chocolate is set. Break into pieces. Stir in pretzels. store in an airtight container.

I needed a party snack. My mind wandered to something chocolately. Naturally. I didn't want it to be too rich, but rather a snack on the lighter side of things. That way I could keep munching without feeling too guilty. This totally fits the bill!

Ingredients:
  • 8 cups Chex Cereal, Type Of Your Choice (Corn, Rice, Wheat, Etc)
  • ½ cups Butter, Melted
  • 2 Tablespoons Cocoa Powder
  • 2 Tablespoons Sugar
How to cook:
  1. Preheat oven to 325 degrees F.
  2. In a large bowl combine all four ingredients, stirring and tossing, stirring and tossing until cocoa is evenly distributed.   2. In small microwavable bowl, microwave semisweet chocolate chips uncovered on High 45 seconds; stir. Continue microwaving in 15-second increments, stirring after each, until chips are melted and smooth. Pour onto cereal in bowl; mix thoroughly to coat. Transfer mixture to 2-gallon resealable food-storage plastic bag; add powdered sugar mix to bag. Seal bag; shake to coat. Spread in one of the pans to cool completely, about 30 minutes.
  3. In small microwavable bowl, microwave white vanilla baking chips uncovered on High 30 seconds; stir. Continue microwaving in 15-second increments, stirring after each, just until chips are starting to melt and can be stirred smooth. Stir in marshmallows; coat completely. Spread in remaining pan, spreading mini marshmallows into small clusters; let stand about 30 minutes or until coating is set.
  4. In large serving bowl, mix cereal, marshmallow clusters and chocolate nonpareils. Store at room temperature in covered container.
