- 2 large boneless skinless chicken breasts
- 1/2 cup dill pickle juice
- 1/4 cup whole milk
- 1 tablespoon powdered sugar
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon black pepper
- 1 teaspoon kosher salt
- 1/4 teaspoon smoked paprika
- 1 cup mayonnaise
- 1/4 cup sweet bbq sauce
- 1/4 cup honey
- 3 tablespoons dijon mustard
- 1 tablespoon lemon juice (fresh squeezed)
- 1/2 teaspoon smoked paprika
- 4 slices pepper jack or Colby jack cheese
- 4 multigrain buns
- green leaf lettuce
- beefsteak tomato slices
- 4 slices thick cut applewood smoked bacon (cooked crispy)

- Prepare The Marinated Grilled Chicken
- Slice the chicken breasts in half lengthwise, and set aside.
- In a large bowl stir together the pickle juice, milk, powdered sugar, garlic powder, onion powder, pepper, salt, and paprika.
- Add the chicken breasts to the marinade and make sure the chicken is well coated on all sides. Cover the bowl with plastic wrap and refrigerate it for at least 30 minutes, or up to 4 hours.
- Make The Honey Roasted BBQ Sauce
- While the chicken is marinating, make the barbecue sauce. In a separate medium-sized bowl, add the mayonnaise, bbq sauce, honey, dijon, lemon juice, and paprika. Stir until well combined. Cover the bowl with plastic wrap and refrigerate until ready to use.
- Preheat the grill over medium heat. Cook the chicken, flipping occasionally until an internal temperature reaches 165°F in the thickest part of the breast, up to 15 minutes total.
- Remove the chicken from the heat and top each piece of chicken with a slice of cheese to melt slightly.
- Assemble The Chicken Sandwiches
- To assemble, remove the tops off the buns. On top of the bottom bun add some lettuce and a slice of tomato. Add a piece of chicken on top of the lettuce and tomato, followed by a slice of bacon broken in half so it fits.
- Spread the honey roasted bbq sauce on the bottom side of the top bun. Add to the sandwiches and enjoy.

- Marinate

- In a large bowl or baking dish, mix the milk into the cooled pickle juice brine (made from water, distilled white vinegar, fresh dill, raw organic sugar, salt, garlic, red pepper flakes and black peppercorns) and pour over the chicken fillets, ensuring that the pieces are fully submerged in the liquid. Set the chicken into the refrigerator for at least two hours.
- Prepare Seasoning
- Add the spices (salt, black pepper, smoked paprika, raw organic sugar, garlic powder and potato starch) to a high powdered blender or grinder and blend until combined into a fine powder.
- Remove the chicken from the marinade and pat each piece dry. Cover the back and front of each fillet in a (light) coat of olive oil and an even coating of the spice blend.
- Grilling
- Spritz a grill pan or grill plate with a light coating of oil. You can also cook this on a BBQ grill or even a flattop if you like.
- Grill the chicken until cooked and grill /sear marks form. Once cooked, remove and set aside to rest for a few minutes.
- Assembly

- ½ cup white vinegar
- ¼ cup light brown sugar
- 1 tbsp salt
- 2 tsp garlic powder
- 1 tsp orange zest
- ¼ cup granulated sugar
- 2 boneless skinless chicken breasts
How to cook:
- Marinade: Whisk together white vinegar, brown sugar, salt, sugar, garlic powder and orange zest until well-mixed; add chicken pieces. Soak chicken pieces in the marinade mixture for 30 minutes, moving them to the refrigerator to keep cool.
- Grill Chicken: Remove chicken from brine and pat dry with a paper towel. Place on a hot grill at 400F (gas or charcoal work well). Watch the chicken as it cooks.
