  • 1 lemon (juiced)
  • ½ cup parmesan cheese (shredded)
  • 2 cups orzo pasta (uncooked)
  • 2½ cups chicken broth (low sodium)
  • ½ cup heavy cream
  • 1 tsp lemon pepper seasoning
  • 1 ½ tsp salt
  • ½ tsp black pepper
  • 4 chicken breasts (approx. 1.5lbs)
  • 2 tbsp parsley

How to cook:
  1. To the instant pot, add the butter, garlic, orzo, chicken broth and heavy cream. Mix together. Season the chicken breasts with the salt, pepper and lemon pepper. Place the chicken on top of the pasta mixture. Place the top on the instant pot and move the vent to the "seal" position. Turn the pot on and select pressure cook on high for 5 minutes.
  2. The pot will take approximately 10-15 minutes to reach pressure, and then the cook cycle will last 5 minutes. Allow the pot to naturally release for 10 minutes, and then do a quick release.
  3. Use two forks to break the chicken up slightly. Add in the parsley, lemon juice and parmesan cheese. Mix together and allow to rest for 5 minutes before serving.

  • 2 tbsp canola oil
  • 1 1/2-2 pounds chicken breast, diced
  • 1 tsp dried oregano
  • 1 tsp dried tarragon
  • 1 tbsp minced garlic
  • 1/4 tsp black pepper
  • 2 tbsp white wine
  • 2 cups chicken stock
  • 1 1/2 cups orzo
  • 1 red pepper, diced
  • 1/2 cup sour cream
How to cook:
  1. Set your Instant Pot to the saute setting.

  • 3 cloves garlic, minced
  • ¼ cup chicken broth
  • 2 bay leaves
  • 1 cup orzo
  • 2 cups chicken broth (see note*)

How to cook:
  1. Season the chicken with salt.
  2. STOVETOP
  3. Start by cooking the chicken. In a large pot or large saucepan, heat up some oil and brown the chicken for a total of 8-9 minutes, flipping once halfway. When you flip, add the garlic. After 4 more minutes, add the chicken broth and bay leaves. Bring to a simmer then lower heat, cover and cook for 1 ½ hours to 2 hours. Take the chicken out and any meat the falls into the pot and place the chicken on a plate. Pour that leftover chicken drippings into a measuring bowl. The orzo needs a total of 2 cups of broth to cook, so add the difference in store bought broth. Cook the orzo, uncovered, on medium heat for 8-12 minutes (check the orzo package to see how long it needs), or until the orzo is soft and the liquid has evaporated. Return the chicken and serve.
  4. INSTANT POT
  5. Hit the saute function for 15 minutes. Add the oil and brown the chicken for a total of 8-9 minutes, flipping once halfway. When you flip, add the garlic. Add the chicken broth and bay leaves. Turn off saute function, cover, and pressure cook on high for 20 minutes. Quick release and open the pressure cooker.   • 1 cup diced onion
  • 1 Tbsp minced garlic
  • ½ cup chicken broth
  • 1 ½ pounds chicken breasts

  • 1 (14.5 oz) can petite diced tomatoes (fire roasted would be good)

How to cook:
  1. Turn your Instant Pot to the saute setting. When the display says HOT add in the olive oil and swirl it around. Add in the onion and saute for 4 minutes. Then add in the garlic and saute for 20 seconds. Deglaze the pot with the chicken broth.
  2. Place the chicken in a single layer in the bottom of the pot. Sprinkle the salt, pepper and Italian seasoning over the chicken. Dump the tomatoes over the top of the chicken.
  3. Pour the orzo and water into a pan* that fits inside your Instant Pot. Using a sling* lower the pan on top of the chicken as evenly as possible. (I covered my pan)
  4. Cover the Instant Pot and secure the lid. Make sure the valve is set to sealing. Set the manual/pressure cook button to 12 minutes for thawed chicken and 15 minutes for frozen chicken (or follow this method for best results). When the time is up let the pot sit for 5 minutes and then move the valve to venting. Remove the lid.
  5. Use hot pads to remove the orzo pan. Set it aside.
  6. Cut the chicken into pieces. Stir the parmesan and spinach into the pot. Stir the orzo into pot. Salt and pepper to taste.
  7. Scoop onto serving dishes and enjoy.
