- 2 tablespoon sesame oil
- 2 tablespoon vegetable oil
- 4 cups cooked rice (cooled)
- 3 tablespoon soy sauce
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 cup frozen peas and diced carrots blend
- 3 larges eggs light (beaten)

- Preheat the Blackstone grill over medium low heat (approximately 350 degrees F).
- Add the vegetable oil onto the griddle and use your spatula to spread it around. Then add in the peas and carrots mix. Sauté the vegetables for for 3-5 minutes until the vegetables are soft.
- Move the vegetables to the cooler side of the griddle and then add the beaten eggs on the Blackstone griddle.
- Scramble the eggs on the griddle. Move the eggs to the cooler side of the griddle with the vegetables.
- Then pour the cooked rice onto the griddle and top it with the sesame oil, soy sauce, salt and pepper.
- Sauté the rice on the griddle for 3-4 minutes until heated through and slightly browned.
- This mix together the veggies, eggs and rice.
- Serve immediately while warm and enjoy!

- 1/4 cup vegatable oil
- 3 chicken thighs (boneless and skinless)
- 1/2 cup diced carrots

- Heat the griddle to medium-high and when hot, add a few tablespoons of oil.
- Season and cook the chicken thighs. When they start to cook through, chop them up into bite-sized pieces and scoot them to one side to finish cooking.
- On another spot on the griddle, heat some more oil then cook the onions and carrots for 3-4 minutes or until they start to soften. Add the garlic and ginger and cook an additional minute.
- Next, add the rice and start mixing it together. Cook for 3-4 minutes. If your rice is sticking, add a bit more oil.
- Drizzle the sesame oil and fish sauce on top of the rice and mix well. Cook an additional minute or two.
- Add the peas and mix again. Keep that rice working on the Blackstone top and if it starts sticking, add a bit more oil.
- Add the soy sauce and mix well, then make a hole in the center of the rice, add a wee bit of oil (about a tablespoon) then add the lightly whipped egg. Scramble it in the space in the middle of the rice, then work the egg into the rest of the rice.
- Cook another minute or two, then dish it up!
- Garnish your chicken fried rice with sesasme seeds and sliced green onions. Yum!

- 1 cup frozen mixed vegetables

How to cook:
- Dice the chicken and add to an oiled Blackstone griddle. Make sure it's hot before adding the chicken.
- Brown the chicken and add soy sauce and sesame oil. Sprinkle with salt and pepper, turning the chicken frequently. Once done, move off to the side of the griddle to keep warm.
- Add oil to griddle and add vegetables. Drizzle with soy sauce and cook until vegetables are tender. Move off to the side of grill.
- Add cold rice to the hot griddle. Mix in soy sauce, garlic and some sesame oil and stir well. Once hot, move off to the side.
- Crack two eggs onto greased griddle and scramble. Once done, mix all ingredients together. Add some more soy sauce, salt and pepper.
- Remove from heat, serve and enjoy!

- Gather ingredients, dice, measure and chop things out, this will make it easier when assembling this quick dish.
- Preheat Blackstone Griddle to medium-high heat; when hot add a few tablespoons of oil.
- Sprinkle the chicken with a little salt and pepper, then cook in the griddle, moving them to the side of the griddle to finish cooking.
- On another part of the griddle add a little more oil and heat for a minute. Cook onions, carrots and red bell pepper for 3-4 minutes until tender. Add zucchini, ginger and garlic and cook for an additional minute.
- To your vegetable mixture add your cooled rice, mixing it all together, using your metal spatula to flip and turn the rice and veggie mixture. Add a little more oil if your rice is sticking to the griddle. If using fresh peas, add now and stir to combine.
- Add the sesame oil and fish sauce to the rice mixture, stirring to combine, cooking for another 1-2 minutes.
- If using frozen peas, add now and mix into fried rice, continuing to flip and turn the rice mixture on the Blackstone top – remember if it starts sticking, add a little more oil.
- Pour on the soy sauce and mix to combine. Scoot the rice to the side slightly and add a little oil or a few teaspoons of butter, quickly scramble the eggs to desired doneness and mix eggs and chicken into the fried rice.
- Garnish with sesame seeds and sliced green onions if desired. Serve immediately.
