Weeknight Easy Butter Chicken Tacos
These butter chicken tacos are made in the Ninja Foodi (or can be adapted for any type of pressure cooker or oven). They are insanely easy, and insanely delicious! Taco-bout a winning combo!

Ingredients:
  • 4 chicken breasts (boneless skinless)
  • 1 400 ml jar of butter chicken sauce - ex: Patak's 400 ml
  • 8-10 flour tortillas, small or medium size
  • 1-2 limes, cut into wedges
  • 2-3 jalapenos, sliced
  • 1 medium red onion, thinly sliced
  • 1/2 cup greek yogurt
  • 1/2 cup cilantro, chopped
How to cook:
  1. Place chicken breasts and jar of butter chicken sauce in Ninja Foodi, Instant Pot, or pressure cooker.*
  2. Seal with pressure lid, select "PRESSURE" setting, and adjust time to 25 minutes.
  3. Once time finished cooking, turn valve to manually release pressure.
  4. Using a hand held mixer, mix on low to shred chicken. You may also use forks to shred, or cut chicken into bite size pieces with a knife.
  5. Heat heavy skillet, such as a cast iron to medium-high heat.
  6. Place flour tortillas in pan, for 30 seconds to 1 minute per side, or until slightly browned, bubbled, and warm.
  7. Fill tortillas with butter chicken mixture.
  8. Top with desired toppings.

  • 1/2 c chicken broth
  • 1/4 c taco seasoning
  • 15 oz salsa con queso (or salsa for a lighter version)
  • 10 oz diced tomatoes
  • 1 lime (juiced)
  • 8 oz cream cheese (softened)

How to cook:
  1. Pour the broth or water into the pressure cooker. Place defrosted or fresh breasts inside. Sprinkle the taco seasoning over the chicken and then cover with the salsa (or con queso style).
  2. Pour the diced tomatoes (with or without chilies), and lime juice on top. Dot the top with smaller chunks of the cream cheese. Do not stir!!
  3. Seal the lid on the pressure cooker and set the valve to sealing. Set for 15 minutes on high pressure. When the cycle is complete, allow the pressure cooker to naturally release for 10 minutes, then do a quick release.
  4. Shred the chicken with two forks and serve over nachos, tacos, or rice with your choice of toppings.

  4. Once "Add Food" flashes, carefully place a tortilla with a handful of of cheese on top.
  5. Place a tortilla on top and close the lid to your grill.
  6. Allow the cheese to fully melt, mine took about 6 minutes. Once inside cheese melted, place a handful of cheese on top Close the lid for a few minutes to allow to melt.
  7. Once melted carefully remove and start topping your quesadilla. Add your taco meat.
