Ingredients:
- 1 tbsp cooking oil
- 1 tsp Sichuan peppercorn
- 3 cloves garlic, sliced
- 3 slices ginger
- 6 dried chillies (or fresh chillies)
- 250 g cabbage, hand-torn into small pieces (see note 1)
- ½ tsp dark soy sauce
- ½ tsp light soy sauce
- ¼ tsp black rice vinegar
- 1 pinch salt
- 1 pinch sugar
- 1 tbsp cooking oil
- 2 Chinese sausages (Lap cheong), sliced (see note 2)
- 1 tsp ginger, julienned
- 250 g cabbage, hand-torn into small pieces (see note 1)
- 1 stalk scallions, finely chopped
- 2 tsp oyster sauce
- ½ tsp light soy sauce
How to cook:
- For the vegetarian version
- Add cooking oil and Sichuan peppercorns to a cold wok. Sizzle over high heat until fragrant (do not burn). Remove the peppercorns with a spatular.
- Fry ginger, garlic and dried chillies in the oil briefly then stir in cabbage.
- When the cabbage wilts, add soy sauce, black rice vinegar, salt and sugar.
- Stir fry for a further 20 seconds or so. Dish out and serve warm.
- For the sausage version
- Heat up the wok until it lightly smokes. Pour in oil then add Chinese sausage and ginger.
- When the sausage slices curl up a little, stir in cabbage and scallions.
- When the cabbage wilts add oyster sauce and light soy sauce.
- Stir fry for a further 20 seconds or so. Dish out and serve warm.

- ⅓ cup soy sauce (use gluten-free if needed)
- 3 tablespoons water
- 2 tablespoons dry sherry or Chinese rice wine
- 1 teaspoon Asian/toasted sesame oil

- ¼ teaspoon red pepper flakes

- 1 pound broccoli, cut into 1-inch florets (or ¾ pound florets)

- In a small bowl, whisk the soy sauce, water, dry sherry, sesame oil, sugar, cornstarch, red pepper flakes and dry mustard together. Set aside.
- In a large nonstick skillet, bring 1 inch of water to a rapid boil. Add the broccoli and cook for 2-3 minutes, or until tender-crisp. Strain the broccoli in a colander and then run under cold water to stop the cooking process. Set aside and allow to fully drain.
- Wipe the skillet dry. Add 2 tablespoons of vegetable oil and heat over high heat. Add the shiitake mushrooms and red peppers and cook, stirring occasionally, for 5-6 minutes, until the mushrooms are browned and the peppers are softened. Add the garlic, white/light green scallions, and ginger; cook, stirring constantly, until fragrant, about 30 seconds. Return the broccoli to the pan and cook until warmed through, about 1 minute. Add the reserved sauce. Toss and cook until the sauce is thickened and the vegetables are evenly coated, about 30 seconds. Transfer to serving dish and sprinkle with dark green scallions. Serve with rice, if desired.
