Ingredients:
  • 1 large head of Broccoli ( cut into florets)
  • 3 Tablespoons vegetable oil
  • 6 skinless, boneless chicken thighs (cut into bite sized pieces)
  • 3 cloves garlic (peeled and finely chopped)
  • 3 green/spring onions (trimmed and sliced)
  • 1 inch piece of ginger (peeled and chopped)
  • 2 Tablespoons Hoisin Sauce (or oyster sauce for less sweetness)
  • 3 Tablespoons light soy sauce ((extra to taste))
  • 6 Tablespoons honey (approximately)
  • 6 Tablespoons hot water

How to cook:
  1. Steam or sauté the broccoli to the softness just a bit firmer than you prefer & set aside.
  2. Heat a wok over a high heat and add a bit of oil. Add the chicken and brown on all sides to seal the meat. Remove the chicken and set aside.
  3. Fry the garlic, spring onion and ginger for 30 seconds in the hot wok, adding a little more oil if necessary, tossing now and then.
  4. Put the chicken back in the wok. Add the soy sauce, hoisin sauce, and the hot water and bring to a boil. Drizzle with some of the honey, cover, and simmer, turning & drizzling with honey now and again for 7-10 minutes, or until the chicken is cooked through and the sauce reduced.
  5. Add the broccoli and toss with the sauce until cooked through

  • 0.6 lb /300g boneless skinless chicken breasts, ((sliced 1/4 inch thick))
  • 1 teaspoon soy sauce
  • 1 teaspoon cornstarch
  • 1 tablespoon rice wine, ((Shaoxing wine or dry sherry))
  • 1/2 beaten egg
  • 1 teaspoon oil
  • 3/4 cup water
  • 1 1/2 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon cornstarch
  • 10 oz /300g broccoli florets
  • 3 cloves garlic, ((minced))
  • 1 tablespoon oil

How to cook:
  1. MARINADE CHICKEN:
  2. Cut the chicken breast into 2 slices. (Noted 1)
  3. Tap the chicken lightly against the grain direction with the back of the knife. (Noted 2)
  4. Cut the chicken breast diagonally into 1/4 inch thick slices. (Noted 3)
  5. MARINADE CHICKEN:
  6. Marinate the chicken breast with rice wine, soy sauce, beaten egg, and cornstarch. Mix well and set aside for at least 10 minutes. (Noted 4)
  7. Add oil after 10 minutes when the chicken breast has absorbed the water. (Noted 5)
  8. Mix the sauce- add all the sauce ingredients to a medium bowl and whisk until completely mixed. Set aside.
  9. Cook chicken breast- In a large skillet over medium-high heat, heat oil. Add chicken in a single layer, working in batches if needed, and cook until seared, about 2 minutes per side. Remove it from the pan.
  10. Sauté the aromatics - In the same pan, add the remaining tablespoon of oil, the garlic, and fry for 10-15 seconds.
  11. Add broccoli and 1/4 cup water - then cover the pan and simmer until tender, about 2 minutes.
  12. Add the sauce - to the pan and bring it to a simmer.
  13. Return the chicken- add the chicken back in and let the sauce thicken for 20-30 seconds.The cornstarch we used for the chicken should thicken the sauce. If you find that it doesn't thicken enough, add 1 teaspoon of cornstarch to 2 tablespoon of cold water and stir to dissolve the cornstarch and add it to the pan.
  14. Serve - immediately with a side dish of rice.

How to cook:
  1. Marinate the chicken with the cornstarch and salt. If the chicken is too dry, add a little water so each piece of the chicken is nicely coated with the cornstarch.
  2. Heat up a pot of water and bring it to boil. Cook the broccoli for 1 minute. Drained and set aside.
  3. Heat up a wok or skillet on high heat, add the oil. When the oil is heated, add the garlic and stir-fry until aromatic or become light brown. Add the chicken and do a few quick stirs. Add the sauce and turn the heat to low. When the chicken is cooked through, add the broccoli, stir to combine well. Dish out and serve immediately.

  • 300g long-grain rice
  • 700g broccoli, cut into bite-sized florets
  • 2 tbsp light soy sauce​
  • 2 tbsp hoisin sauce
  • ½ lime, juiced​
  • 2 tsp clear honey
  • 1 tsp crushed chillies
  • 1 tbsp cornflour
  • ½ tsp ground white pepper
  • ½ chicken stock cube, made up to 200ml, left to cool
  • 1 tbsp sesame oil
  • 400g boneless chicken thighs, cut into 3cm pieces
  • 100g bunch spring onions, thinly sliced
  • 2 garlic cloves, finely chopped​

How to cook:
  1. Cook the rice to pack instructions, then cover the pan to keep warm. Meanwhile, steam the broccoli for 6-8 mins until just tender. Whisk the soy, hoisin, lime juice, honey, chilli, cornflour, pepper and stock in a bowl, then set aside.
  2. Heat the sesame oil in a large frying pan until very hot. Sear the chicken for 1-2 mins, without moving, until lightly browned. Stir and cook for another 2-3 mins until browned on all sides and cooked through. Transfer to a plate.
  3. Set 2 tbsp spring onions aside and add the rest to the pan along with the garlic and ginger. Cook for 2 mins, stirring frequently, until fragrant and just softened.
  4. Reduce the heat to medium-low, stir in the soy sauce mixture, then cook for 2 mins to thicken. Add the cooked chicken and broccoli to the pan and gently coat in the sauce. Divide the rice between 4 plates; top with the chicken and broccoli. Scatter with the sesame seeds and reserved spring onions to serve.
