  • 1 litre chicken stock
  • 1 clove garlic
  • 1 Tablespoon soy sauce
  • 2 packets Chinese chicken n corn cuppa soup
  • 1 large tin creamed corn
  • 1 cup shallots
  • 1-2 Tablespoons cornflour, if needed

  • 2 pounds chicken thighs (skins removed)
  • 1 cup shredded carrots
  • 1 6 oz package sliced mushrooms of choice

  • 2 tablespoons rice vinegar
  • 2 tablespoons grated fresh ginger (or use 1 tablespoon ground ginger)
  • 6 cups chicken stock or broth

  • 5-6 oz dried rice noodles (found in the aisan section)
How to cook:
  1. Place chicken thighs, carrots, mushrooms, garlic, soy sauce, vinegar, ginger, stock and water into a 6 quart crockpot. Cover and cook on low for 4-6 hours or high for 2-3 hours.

Ingredients:
  • 2-1/2 lb. bone-in, organic chicken thighs (about 6 thighs)
  • 1 qt chicken bone broth
  • 2 cups water
  • 2 medium onions, diced
  • 2 turnips, peeled and diced
  • 3 celery stalks, sliced
  • 3 carrots, peeled and sliced into thick slices
  • 3 large (or 6 smaller) garlic cloves, smashed
  • 5 slices of peeled ginger (about ¼-inch thick)
  • 3 scallions, sliced (add the roots of the scallions too)
  • 1 Tbs fresh dill, chopped (use more if you like)
  • sea salt and black pepper to taste
