Ingredients:
  • 1 1/4 1 1/4 2% cup 2% or whole milk
  • 1 1 1 stick of butter, melted
  • 2 2 2 large eggs
  • 1 1 1 teaspoon vanilla
  • 1 1 1 tablespoon baking powder
  • 1/4 1/4 1/4 teaspoon salt
  • 1/4 1/4 1/4 cup cocoa powder
  • 1 1 1 cup white sugar
  • 2 2 2 cup all-purpose flour
How to cook:
  1. Add all of these ingredients into the bread pan, making sure that the melted butter, if hot, does not touch the raw eggs as it could scramble them.
  2. Place the pan into the bread machine & set it on Batter Bread. Press start & close the lid.
  3. The machine does all the work for you. It mixes the batter and then bakes it too. In 1 hour and 40 minutes, you will be smelling yummy cake.
  4. Remove the pan from the machine and place on a cooling rack for approximately 10 minutes.
  5. Then, turn upside down and the cake should “pop” right out.
  6. Allow the cake to cool completely, or serve warm.
  7. The kids like it served with a dollop of fresh whipped cream or powdered sugar.
  8. NOTES:
  9. This recipe can be cooked in a greased loaf pan in the oven too, on 350°F for 20 minutes. Then, if it isn’t cooked through, just add additional 5 minutes until a toothpick inserted in center comes out clean.
  10. The cocoa powder is an additional ingredient that I have added. At this time, you could also add 2 tablespoons of raisins and omit the cocoa, or an additional 2 tablespoons of chocolate chips. I have made it with blueberries, dried cranberries, changed up the vanilla for banana extract and put bits of banana--the possibilities are endless.

  • 1 cup (120g) all-purpose flour
  • ¾ cup (65g) unsweetened cocoa powder
  • ¾ teaspoon baking powder
  • ½ teaspoon salt
  • ⅓ cup (80 ml) buttermilk*
  • 1 teaspoon instant coffee granules**
  • 2 sticks (230g) unsalted butter, softened at room temperature
  • 1 cup (200g) granulated sugar
  • 4 large eggs, at room temperature
  • 1 teaspoon vanilla extract (optional)
How to cook:
  1. Preheat the oven to 325°F (160°C). Lightly grease a 9 x 5” (23×13 cm) loaf pan. Line the long and short sides with parchment paper, allowing the ends to hang over for easy removal of the loaf after baking.
  2. Before you start, dissolve the coffee granules with 1 teaspoon boiling water, and prepare the buttermilk as instructed*.
  3. Sift flour, cocoa powder, baking powder and salt into a medium bowl. Sift a second time. Set aside.
  4. Add butter to the bowl of a standing mixer (or in a large bowl using a hand mixer) and beat on medium speed for 3-4 minutes, until creamy, scraping down the sides as needed. Gradually add sugar to the butter and mix for 4-5 minutes until light and fluffy, scraping down the sides.
  5. Add the eggs, one at a time mixing until combined before adding the next one. Pour in the coffee, buttermilk, vanilla, and mix until combined.
  6. Turn down the mixer speed to low and add the dry ingredients, one third at a time. Mix until just combined.
  7. Pour the batter into the prepared loaf pan and bake for 50-55 minutes, or until a toothpick inserted in the center comes out clean. Let cool in the pan for 10 minutes. Then, using the parchment paper, lift the cake out of the pan and place on a rack to cool completely.
