Ingredients:
  • 1kg (5 1/2 cups) mixed dried fruit
  • 500ml (2 cups) iced coffee flavoured milk
  • 125ml (1/2 cup) Irish Cream liqueur
  • 300g (2 cups) self-raising flour
How to cook:
  1. Combine the dried fruit, iced coffee flavoured milk and Baileys in a large bowl. Stir to combine. Cover and place in the fridge overnight to soak.
  2. Remove the fruit mixture from the fridge and set aside for 30 minutes to come to room temperature.
  3. Meanwhile, preheat the oven to 180C/160C fan forced. Grease a 20cm square cake pan. Line base and sides with baking paper.
  4. Add the flour to the fruit mixture. Stir to combine. Pour into the prepared pan and smooth the surface. Bake for 1 hour 45 minutes or until a skewer inserted into the centre comes out clean. Set aside in the pan for 30 minutes to cool slightly before transferring to a wire rack to cool completely.

Ingredients:
  • 1 kg mixed dried fruit
  • 3 cups fruit juice
  • 3 cups self-raising flour
How to cook:
  1. Soak the dried fruit in the juice overnight.
  2. Preheat oven to 125°C.
  3. Stir the flour into the soaked fruit and mix well.
  4. Spoon the mixture into a 22-cm baking paper lined cake tin.
  5. Bake for 2 1/2 hours in the bottom of the oven or until cooked through.
  6. Remove and leave to cool.
  7. Wrap in tin foil or place in an airtight container where this cake will keep nicely for up to 3 to 4 weeks if not devoured prior.

4 ingredient any-fruit summer (vegan!) cake
Beautiful summer cake that is made in one bowl, using 4 ingredients plus any fresh fruit you have on hand (berries make for the best results). It´s fluffy, elegant, pillow-like, nice and moist, wholesome, vegan and truly delicous. Have it for breakfast, lunch, dinner..all day long. And make more than just 1 tray, it dissapears quickly.

Ingredients:
  • 1 1/4 cups spelt flour
  • 1 cup coconut milk (we are talking full.fat here!)
  • 1/4 cup maple syrup
  • 1 teaspoon baking powder
  • 2 handfuls fruit of your choice - rhubarb and berries is THE thing
How to cook:
  1. Preheat your oven to 180°C. Line a smaller square baking dish with a baking paper.
  2. Wash, clean and cut your fruit. Mix with a bit of maple syrup or coconut sugar.
  3. In a bowl, mix together flour, coconut milk, maple syrup and baking powder. The batter should be a nice consistency – not runny but not thick.
  4. Pour into your prepared baking dish, spread your fruit over and bake for about 20-30 minutes until risen. When you put a wooden skewer through the cake it should come out clean and dry.
  5. Let cool for a while and enjoy any time of a day. Be careful, it is so delicious and easy to eat, that one cake won´t be enough. Double the volume and bake more. :) Enjoy and repeat.
  6. If you feel fancy, try adding some vanilla extact into the batter. Also, lemon zest makes it fabulous.
