This delicious apple pie cake is an absolute treat and the perfect combination of my three favorite things. Syrupy apple pie filling, moist vanilla cake batter, and buttery crumble topping.

  • 5 Apples (large)
  • ½ cup Brown sugar
  • 2 tbsp Flour (or cornstarch)
  • ½ tsp Cinnamon powder
  • ¼ tsp Nutmeg powder
  • ½ tsp Ground ginger
  • ½ cup Unsalted butter (room temperature)
  • ½ cup Cream cheese
  • 1 cup Brown sugar
  • 3 Eggs (large)
  • 2 cups All purpose flour
  • 1½ tsp Baking powder
  • 1 tsp Baking soda
  • ½ tsp Salt
  • 1 tsp Ground ginger
  • 1 tsp Cinnamon powder
  • ½ tsp Nutmeg powder
  • ½ cup Buttermilk
  • 1 tbsp Vanilla extract
  • ¾ cup All purpose flour
  • 4 tbsp Chilled butter into cubes
  • 2 tbsp Sugar

How to cook:
  1. Apple pie filling
  2. Peel, core, and chop apples into small pieces about 1/8 inch. Add brown sugar, cornstarch, and spices. Set asidePro tip - Large chunks will cause the cake slices to break easily. Use a bowl of water with lemon juice and drop each peeled apple into it. This will prevent them from oxidizing and give you enough working time.
  3. Crumble
  4. In a bowl, combine brown sugar, salt, spices, and flour. Grate in the chilled butter - combine well. Place in the fridge to keep chilled.Pro tip - if you do not want to grate the butter you can also cut the chilled butter into the flour using a pastry blender or fork. Of course, alternatively, you could also use a food processor.
  5. Cake batter
  6. Preheat oven at 325°F/165°C/ Gas Mark 3
  7. Grease and flour well an 8-inch tube pan or 12 cup bundt pan
  8. Dry ingredients - Combine the flour with baking powder, baking soda, salt, and spices - set aside.
  9. In the bowl of a stand mixer with the paddle attachment cream together the butter and cream cheese. Add brown sugar and continue to cream until light and fluffy.
  10. Next, add the eggs one at a time followed by the flour mixture and buttermilk in three additions. Finally, add the vanilla extract. Pro tip - we do not want to activate the gluten in our flour so do not over mix.
  11. Assemble
  12. Pour half the batter into the prepared baking pan, followed by half the apple pie filling, then the remaining cake batter followed by the remaining apple pie filling.Pro tip - try to spread the batter and apple pie filling as evenly as you can so each and every slice has a good combination of both.
  13. Remove the chilled crumble from the fridge and sprinkle it all over the apple pie cake.Pro tip - this cake is delicious with or without the crumble on top.
  14. Bake for 40 to 50 minutes until a skewer inserted in the center comes out clean.
  15. When baked cool in the pan for ten minutes then invert onto a cooling rack and cool completely. Dust with confectioners sugar before serving

Cinnamon Apple Pie Cake

  • 6 to 8 medium Granny Smith apples, (peeled and thinly sliced)
  • 1 1/4 tablespoons granulated white sugar
  • 1/4 teaspoon ground cinnamon
  • 3 large eggs
  • 1 1/2 cups superfine white sugar ((see NOTES below))
  • 3/4 cup vegetable or canola oil
  • 3/4 cup unsweetened applesauce
  • 3 teaspoons vanilla extract
  • 1 1/2 cups all purpose flour
  • 1 1/4 tablespoons granulated white sugar
  • 1/4 teaspoon ground cinnamon

How to cook:
  1. Preheat the oven to 350 degrees F. Spray a 9 1/2 to 10-inch springform pan with nonstick spray. Line the bottom with a round of parchment paper and then spray again.
  2. Layer the apple slices in the pan until they come about 2/3 of the way up the side. (I went a little higher than that and it worked out fine). Sprinkle the cinnamon-sugar over the apples.
  3. Prepare the batter by beating the eggs and sugar until light and fluffy. Add the oil, applesauce and vanilla and beat well, then stir in the flour. Pour the batter on top of the apples, and sprinkle with additional cinnamon-sugar on top. Tap the pan on the counter a few times to allow the batter to sink down and around the apples.
  4. Bake for 1 hour and 20 minutes, or until a skewer inserted into the center of the cake comes out clean. Cool *completely* in the pan. If you try to remove the cake from the pan while it is still warm, it will tend to break apart. I refrigerated my cake before slicing, and that worked out well. Serve slices with ice cream (warm individual slices in the microwave, if desired).

How to cook:
  1. Preheat oven to 350º Fahrenheit.
  2. Spray a 9x13” baking dish with cooking spray.
  3. Prepare the apples:
  4. Peel, core and chop apples into chunks. Toss in 2 tablespoons sugar and 1 teaspoon cinnamon. Set aside.
  5. Prepare the cinnamon sugar topping:
  6. Mix brown sugar and 1 teaspoon cinnamon together in a bowl. Set aside.
  7. Make the cake:
  8. In a medium sized bowl, cream together the butter and sugar.
  9. Add flour and baking powder and mix well.
  10. Add eggs one at a time (and beat well between each).
  11. Stir in vanilla and milk until smooth.
  12. Gently fold in chopped pecans.
  13. Assemble the cake:
  14. Pour the batter into the baking dish.
  15. Spread the apple mixture evenly over the cake batter and sprinkle the brown sugar and cinnamon mixture on top.
  16. Lightly pat apples into the batter and swirl the brown sugar mixture through the apples using a knife.
  17. Bake for about 40 minutes or until a toothpick can be inserted in the center of the cake and comes out clean.
  18. Let the cake cool for 15 minutes.
  19. Combine powdered sugar and water to create a glaze and then pour over your apple pie cake.
  20. Serve warm.
