Ingredients:
- 2 cups rotini pasta (uncooked)
- 1 cup bell peppers (diced (red, yellow & green))
- ½ cup baby tomatoes halved
- 1 carrot (diced)
- 1 large English cucumber (diced)
- 1/4 cup finely chopped red onion
- 1/4 cup sliced pitted black olives
- 2 tsp finely chopped coriander leaves/cilantro
- ¼ cup mozzarella cheese cubes
- 2 tbsp white wine vinegar
- 2 tbsp lemon juice
- 2 tsp honey
- ¼ cup olive oil
- 1 tsp sriracha
- salt to taste
- ½ tsp black pepper powder
- 1 tsp Italian seasoning
- 1 tsp finely chopped garlic
- 1 tsp finely chopped fresh basil leaves ((optional))
Nutrition:
- Calories: 380 kcal
- Serving Size: 1 serving
- Cook pasta
- Boil water & add salt. Cook pasta according to the package directions. Drain & immediately rinse it with cold water & set it aside.
- Saute vegetables
- Saute the bell pepper & carrots for 2-3 minutes in a pan over high heat. Make sure they retain the crunch. It enhances the flavor & aroma of capsicum. Let it cool down completely.
- Make Italian salad dressing
- In a large mixing bowl, whisk together all the ingredients mentioned under the salad dressing.
- Assemble ingredients
- Add the sautéed bell pepper & carrots, cucumber, onion, olives, cherry tomatoes, cheese cubes & cooked pasta.
- Toss ingredients to make salad
- Toss all the ingredients together. Taste & adjust the seasoning.
- Refrigerate the salad
- Cover with a cling wrap & refrigerate for an hour. Taste best when served chill.

Ingredients:
- 1/2 cup extra virgin olive oil
- 1/4 cup red or white wine vinegar ((I like using red))
- 1 1/2 tbsp freshly grated parmesan cheese ((Note 1))
- 1 tbsp sugar (any)
- 1 large garlic clove, minced
- 1/2 tsp each dried basil and oregano
- 1/4 tsp dried parsley
- 1/2 tsp dried chilli flakes (red pepper flakes) (optional)
- 3/4 tsp salt
- 1/2 tsp black pepper
- 300g/10oz spiral pasta, or other pasta of choice
- 180g/6oz thick sliced salami, cut into 2.5cm/1" batons (see photo in post or videos) (I use spicy salami)
- 200g/7oz baby bocconcini, halved (Note 2)
- 1 red capsicum/bell pepper, cut into 3cm/2.2cm strips
- 250g/8oz whole olives (I used Sicilian and pitted black) (Note 3)
- 2 cups cherry tomatoes, halved (~1.5 Australian punnets)
- 1 cup (tightly packed) fresh basil leaves

- Serving Size: 204 g

- Place Dressing ingredients in a jar and shake well.
- Cook pasta according to packet directions minus 1 minute. Drain in a colander and rinse under cold water to stop it cooking further. Shake excess water off well then transfer into large bowl.
- Place remaining Pasta Salad ingredients in the bowl. Drizzle over Dressing and toss. Serve at room temperature.
- Make ahead PRO TIP (Note 4):
- SCOOP OUT a mug of pasta cooking water just before draining. Add 3 tbsp water to Dressing, shake well. Use this Dressing per above, but reserve 3 tbsp to freshen up pasta salad on Day 2 onwards.
- Freshen up pasta salad: Bring to room temp or briefly microwave (cold pasta = dry) to warm gently. Toss with Reserved Dressing then serve.

- 2 cups broccoli (chopped finely)
- 1 cup carrots (shredded)
- 1 cucumber (large)
- 1/4 cup white onion (diced)
- 8 ounce container of crumbled goat cheese

- 1 cup Italian Dressing (or more to taste)

- Cook the noodles according to package directions. Drain and rinse with cold water to stop the cooking then set aside to cool.
- Meanwhile remove the skins of the cucumber and slice lengthwise. Place two halves flat and slice again so you have 4 long slivers. Slice the slivers into small cucumber chunks. Rinse grape tomatoes and set a side. Peel carrots and then grate the carrots. Chop the broccoli into tiny pieces. Cut the onion into small dices. Put the vegetables in a small bowl and set aside.
- In a large bowl combine the cooled Rotini noodles, cucumber slices, grated carrots, grape tomatoes, broccoli, onion and goat cheese crumbles. Add 1 cup of Italian dressing. Combine well and garnish with freshly ground black pepper.
- Serve right away or chill this salad for a couple of hours before serving. This allows for an even more flavorful salad as the flavors combine.

- 2 cucumbers, chopped
- ½ onion, finely chopped

- Combine cooked and cooled pasta with the cucumbers, onion, tomatoes, and olives in a large bowl. Pour the Italian dressing over the salad and stir to combine. Cover and refrigerate for at least two hours before serving.
