Ingredients:
- 2 large bunches collard greens
- 4 ounces thick-cut bacon, chopped
- 1 yellow onion, thinly sliced
- Pinch red pepper flakes
- 1 tablespoon canola oil, if needed
- 6 cloves garlic, minced
- 2 cups low-sodium chicken broth
- 1/4 cup dry white wine
- 1/4 cup freshly squeezed lemon juice
- Kosher salt and freshly cracked black pepper
How to cook:
- Cut and trim the collard greens, removing the tough stems. Roughly chop the trimmed greens into 1/2-inch ribbons.
- Cook the bacon in a large skillet over medium heat until crispy, 8 to 10 minutes. Transfer to a plate with a slotted spoon to leave behind all of the delicious bacon fat to cook the collard greens in.
- Add the onions and red pepper flakes to the same skillet. Depending on the bacon you use, you may need more fat in the pan, so add the canola oil if needed. Saute until the onions are softened, fragrant and beginning to brown, 5 to 7 minutes. Add the garlic and sweat 30 seconds. Then add the collard greens, stirring constantly until softened. Pour in the chicken broth and wine and bring to a simmer. Reduce the heat to medium-low, cover and cook until the greens are tender, 30 to 35 minutes.
- Once the greens are tender, return the bacon to the pan, add the lemon juice and season with salt and pepper.

Ingredients:
- 2 bunches collard greens, stemmed
- 3 teaspoons vegetable oil
- 1/2 red onion, sliced
- 3 slices bacon, cut crosswise into 1/4-inch strips
- 2 tablespoons cider vinegar
- 1 cup homemade or low-sodium store-bought chicken stock
How to cook:
- Working in batches, stack greens; cutcrosswise into 2-inch-thick strips. Gatherstrips; cut crosswise into 2-inch pieces.Transfer to a large bowl of cold water;swish to remove grit. Transfer greens toa colander using a slotted spoon; letdrain. Repeat until greens are free of grit.
- Heat oil in a very large skillet overmedium-high heat. Add onion andbacon; cook until onions are translucent,about 4 minutes. Add greens; cook, stirring,until greens begin to wilt and arereduced in volume.
- Raise heat to high; add vinegar. Cook,scraping up brown bits from bottom ofskillet, until vinegar has evaporated,about 1 minute.
- Add stock; reduce heat. Simmer, covered,until greens are just tender, 12 to 14minutes. If making ahead, refrigerate,covered; reheat over low heat.

- 12 slices apple-smoked bacon, chopped
- 2 bunches collard greens, center stems removed
- 1 onion, thinly sliced
- coarse black pepper (4 turns)
- 1/4 cup apple cider vinegar
- 1/2 cup honey
- 1/2 cup coarse grain mustard
- 1/2 teaspoon Tabasco sauce
- 2 tablespoons lemon juice

- Boil 4 quarts of water in a large pot. Chop 12 slices of bacon into bits; place the bits in a stainless steel skillet; slowly brown while rendering fat. When bacon is brown, remove bacon from skillet (saving the bacon fat); set aside.
- Roll up bunches of collard greens cigar-style and slice into 1/4-inch slices.
- Place sliced greens in boiling water. Return skillet with bacon fat to heat; add thinly sliced onions; sauté for 1 minute.
- Using tongs, remove greens from water and place in skillet.
- Add black pepper and apple cider vinegar; cook for 5 minutes.
- Garnish with bacon bits.
- Honey mustard drizzle: Whisk together all ingredients in a bowl. Drizzle over greens.

Ingredients:
- 3-4 slices bacon
- 1/4 cup finely chopped onion
- 1 large head collard greens, trimmed and julienne sliced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup water
- 1 tablespoon apple cider vinegar
How to cook:
- Heat a large pot over medium heat and fry bacon pieces until crispy. Remove bacon, crumble and set aside. (Leave bacon drippings in pan.)
- Saute onion in bacon grease over medium heat until tender, about 2 minutes.
- Add sliced collard greens (see notes) and toss to coat in the grease. Season with salt and pepper and stir to combine.
- Add 1/2 cup water and cover pot. Simmer on medium low for 20 minutes. (Check after 10-15 minutes to make sure the collards have enough water. Add another few tablespoons if the pot is drying out.)
- Once the collard greens are tender, drain any excess liquid.
- Add apple cider vinegar, stir to combine and simmer for 2 minutes on medium low.
- Serve hot with reserved, crumbled bacon on top.
