Ingredients:
- 1 bunch of collard greens
- 1 tablespoon olive oil
- 1/2 onion (diced)
- 3 garlic cloves (diced)
- 3 cups chicken broth
- 1 t. red pepper flakes
- 1 fully-cooked (smoked turkey leg (can also use smoked turkey wings))
- Seasoning (optional) ((salt, pepper, vinegar, hot sauce )
How to cook:
- Remove the collard green leaf from the steam.
- Wash the collards several times in cold water to remove any dirt and grit. You can also use salt to help remove the grit if needed.
- Rinse well & set aside
- In a large pot, add a tablespoon of olive oil and the chopped onions & garlic. Saute until tender.
- Add in the chicken broth, red pepper flakes, & the turkey leg. Bring to a boil and then reduce heat to simmer for about 20-30 minutes. This helps the broth take on that delicious, smokey flavor!
- Add in the collard greens. Simmer covered for about 45-60 minutes or until your desired tenderness is reached. You can increase the heat if needed but do not boil the collard greens. They will wilt down as they cook.
- When done, season to your preference. In my opinion, these greens don't need a thing if your broth is very sesoned. I usually add in a few dashes of black pepper and a few drops of hot sauce!

- 3 bunches collard greens (about 2 lbs **See notes below)
- 2 cups onion (diced)
- 4 garlic cloves (minced)
- 1 green pepper (diced)
- 1 sweet bell pepper (diced)
- 1 tbsp jalapeno pepper (diced)
- 2 lbs whole smoked turkey wings
- 1 tsp cajun seasoning ((optional))
- 2-3 tsp crushed red pepper
- 2 tsp onion powder
- 2 tsp garlic powder
- 3 cups chicken broth (I used Better Than Bouillon )
- 2 tbsp distilled white vinegar
- 2 tbsp granulated sugar
- salt for taste

- To a large pot or dutch oven, add 1 tablespoon of vegetable oil over medium heat. Add the green peppers, sweet red bell peppers, jalapeño, and onions. Saute until soft. Add the minced garlic and saute for one minute.
- In a large stock pot or dutch oven over medium heat, add the smoked turkey wings, crushed red peppers, the sauteed vegetables and chicken broth. Cover and simmer for about an hour.
- Next, add the collard greens, vinegar, sugar, garlic powder, onion powder and salt and pepper to taste. Mix to combine. If the greens seem like too much. Keep stirring until they have wilted down. They should be able to fit once they have wilted down. Cover and simmer for 2 hours or until the meat has fallen completely off the bone. Once done. Serve immediately.

- 2 tablespoons olive oil
- 1 medium onion, chopped
- 4 garlic cloves, minced

- 1 teaspoon garlic powder
- 1 smoked turkey leg, (you can also use a smoke turkey wing)

- In a large pot over medium-high heat add the olive oil, garlic, and onions. Saute for 2 minutes, or until tender.
- Add in the chicken broth and water, and stir everything together.
- Add in the turkey leg.
- Add in the collard greens and season them with salt, pepper, and garlic powder. Stir everything together, so that the seasonings are evenly distributed.
- Bring the greens to simmer, reduce heat to medium, then cover with a lid.
- Allow the greens to cook for 2 hours, stirring every 30 minutes.
- Once the greens are done cooking, remove the turkey leg from the pot. Remove the meat from the turkey leg, and shred it. Add meat back to the pot with the greens, and stir everything together. Enjoy!
