Ingredients:
  • 2 tablespoons olive oil
  • 1 large red onion, finely ficed
  • 1 large Walla Walla or Vidalia onion, finely diced
  • 2 large yellow onions, finely diced
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 1/2 cups plain nonfat Greek yogurt
  • 1/4 cup mayonnaise
  • 1 teaspoon lemon juice
  • 1/2 teaspoon Worcestershire sauce
  • Vegetables, chips, etc. for serving
How to cook:
  1. Heat the oil in a large skillet over medium-high heat. Add the onions and saute until they are translucent and just beginning to lightly brown, about 10 minutes. Reduce the heat to medium-low and continue to cook until the onions are soft, golden brown, and caramelized, about 20 to 25 minutes longer. If the onions start to burn add 1 to 2 tablespoons of water. Stir in the garlic, salt, and pepper and cook until fragrant, about 30 seconds. Remove from heat and let cool.
  2. In a large mixing bowl combine the yogurt and mayonnaise. Stir in the cooled onions, lemon juice, and Worcestershire. Season with more salt and pepper if necessary. Transfer to a serving bowl, cover with plastic wrap, and let chill for at least one hour or up to two days. Serve with vegetables and chips.

  • 2 medium-large regular cooking onions, chopped (approximately 2 cups once chopped)

  • 2 medium yellow onions (sliced thin)
  • ¾ cup sour cream
  • ½ tsp salt
  • 2 tbsp heavy cream
  • 1/8 tsp vinegar
  • 1/4 tsp garlic powder
  • 2 tbsp mayonnaise
How to cook:
  1. Place an even layer of sliced onions onto the base of the MicroPro® Grill. Place cover on onions in the grilling position. Microwave on high power 7 minutes. Remove from microwave and stir onions. Replace cover and microwave on high power an additional 7 minutes or until caramelized.
  2. Transfer onions to the base of the PowerChef® System fitted with blade attachment. Let stand 10 minutes. Cover and pull cord until onions are well minced.
  3. Replace blade attachment with paddle attachment. Add sour cream, salt, cream, vinegar, garlic powder and mayonnaise. Cover and pull cord until well blended.
  4. Remove paddle from PowerChef®. Cover and refrigerate at least 10 minutes, up to overnight. Serve cold as a dip with vegetables, chips, or pita wedges, or serve as a sauce for steak, chicken, or fish.

  • 3 medium yellow onions, sliced thin
  • 1½ cups 0% fat plain Greek yogurt
  • 1½ teaspoon salt
  • 1 tablespoon salted butter
  • ¼ cup beef broth (or water)
  • 1 teaspoon Worcestershire sauce (4-5 shakes)
  • 2 teaspoons umami seasoning (Trader Joe's is my favorite)
  • 1 16 oz bag of mini sweet peppers

How to cook:

  2. Melt butter in a medium skillet over medium low heat. Once butter has melted and started to bubble, add the onions and 1 teaspoon of the salt

  4. Allow the onions to caramelize. Stirring occasionally to ensure even cooking. This will take about 30-35 minutes. After about 20 minutes of cooking, deglaze the bottom of the pan by adding the beef broth and using the wooden spatula to scrape all of the brown bits from the bottom of the pan. The liquid will cook off quickly.
