- 3 lb beef sirloin roast
- 1 tsp salt
- 1 tsp garlic powder
- 1 tsp ground pepper
- 1 tsp dried oregano
- 1 tsp dried, minced onion
- 2 lbs red potatoes (quartered)
- ¼ cup whole milk
- ¼ cup heavy cream
- ⅓ cup salted butter
- 1 cup grated parmesan
- 1 bulb garlic
- 1 tbsp olive oil
- 1 tbsp dijon mustard

- Before you begin, rest and bring the sirloin roast to room temperature (about 45 minutes).
- Peel the garlic cloves and place into the center of a square of foil. Drizzle with olive oil and season with a pinch of salt. Close foil and place into the oven as it preheats to 250°F.
- Season steak with salt, garlic salt, pepper, oregano, and minced onion.
- Place roast into a pan and into the oven on the center rack. Cook for 1 hour.
- Remove the garlic and steak. Brush the steak with Dijon mustard and ½ of the roasted garlic. Sprinkle parmesan cheese generously over the top. Place the steak back into the oven for 55 minutes.
- Turn off the oven and let the roast rest inside the oven as it finishes cooking and comes to temperature.
- Remove the steak from the oven and place onto a wooden cutting board. Let rest 10 minutes. Slice steak and serve with mashed potatoes

- Add quartered potatoes (skin on) to a large pot and fill with water until the potatoes are just covered. Bring to a boil and boil for 15 minutes.
- Add milk, heavy cream, butter, and reserved roasted garlic to a saucepan over medium heat.
- Remove the potatoes from the water and into a large bowl. Lightly mash.
- Once the saucepan starts simmering, pour it into the bowl with the potatoes and stir until combined Season lightly with salt and pepper to taste.

Ingredients:
- 2.5 lb sirloin tip roast
- 2 tsp kosher salt or 1 tsp table salt
- 1½ tbsp vegetable or olive oil
- 1 tsp pepper
- 2 tsp dried oregano
- 2 tsp dried basil
- 1½ tsp crushed red pepper flakes (for extra spice use chili pepper flakes)
- 3 cloves of garlic (minced)
How to cook:
- Start off by salting the roast the day before you're going to be cooking it (this will give a more flavorful, evenly salted roast). Evenly rub the salt over the roast, take plastic wrap and tightly wrap it around the roast, then place on a plate/bowl in your refrigerator.
- The next day, remove the roast about an hour before cooking (allowing it to warm to room temperature).
- Unwrap the meat from the plastic wrap, dry any moisture off with paper towel.
- Place your oven rack in the middle and preheat to 250°F. While the oven is preheating, rub your roast with 1/2 a tablespoon of oil and minced garlic, then evenly rub with your spice mixture (pepper, oregano, basil, red pepper flakes).
- In a large cast iron pan on medium-high heat with a tablespoon of oil, sear each side of your roast until browned (3-4 minutes per side).
- Once oven is preheated, place the roast on a wire rack on a rimmed baking sheet.
- Cook the roast for about an hour and twenty minutes, or until the meat reaches 115°F on your meat thermometer (invest in one of you haven't yet!).
- Turn your oven off, leaving the roast in for about 30-40 minutes or until it reaches 130°F for medium-rare or 140°F for medium. Leave the door closed this whole time to keep the heat in! I would recommend a meat thermometer like the one I have linked to below.
- After the roast reaches your desired temperature, remove from the oven and allow to rest for 15 minutes. Once the time is up, slice, serve and enjoy!

- 1 teaspoon kosher salt
- 1 1/2 teaspoons coarsely ground black pepper, divided
- 3/4 teaspoon dried oregano leaves

How to cook:
- Preheat oven to 450°F 232°C. In a small mixing bowl combine salt 1 teaspoon pepper 2 g pepper, oregano, thyme, rosemary and dry mustard.
- Brush sirloin tip roast with vinegar and rub with herb mixture. Roast uncovered for 15 minutes. Reduce heat to 325°F 163°C and continue roasting until reaching desired doneness, checking temperature with a meat thermometer (approximately 1 hour for medium doneness; 135-140°F 58-60°C on thermometer.)
- While roasting, blend or whisk together sour cream, blue cheese, Worcestershire sauce, remaining 1/2 teaspoon 1 g pepper, chives and celery salt.
- Remove from oven, tent loosely with foil, and let rest 10 minutes before serving.
- Slice roast and serve with blue cheese sauce.
