Ingredients:
- 4 large eggs
- 1 tbsp grated parmesan cheese
- 2 tbsp milk
- pinch salt
- pinch black pepper
- 4 slices bacon
- 4 ciabatta rolls
- 4 slices, or swiss cheese gouda cheese

- Preheat oven to 375 degrees F. Grease 4 holes of an extra-large muffin pan or one loaf pan.
- Beat together eggs, parmesan, milk, and salt and pepper until frothy. Divide between muffin cups or pour all into the loaf pan. Bake for 10 to 12 minutes, until puffed and set.
- Meanwhile, cook the bacon and slice open the ciabatta buns.
- Set open buns on a baking sheet. Once eggs are done cooking, remove eggs from pan and arrange one on each bun bottom. Add a slice of cheese on top, then bacon. If eating immediately, put tray in the oven and broil just long enough for cheese to start to melt.
- To freeze, top sandwiches with the bun top and then put the tray in the freezer. Once frozen, wrap sandwiches individually. Reheat in the microwave or toaster oven.

Ingredients:
- 6 eggs
- 1/4 cup half & half
- Pinch of salt
- Pinch of pepper
- Butter for cooking the eggs
- 8 slices of bacon, cooked
- 4 slices of gouda cheese
- 4 ciabatta rolls, toasted
How to cook:
- In a bowl, add the eggs, half & half, salt and pepper; whisk to combine. In the same pan, over medium heat, add a pat of butter. Add a circular mold to the pan. Holding down the mold, pour a 1/4 of the egg batter in the mold. Hold the mold for a few seconds so the batter doesn't sneak out the bottom; remove the mold. Once the egg is set, turn over and add a 1/4 cup of the cheese. Cover the pan and cook for 2 minutes or until the cheese is melted. Do this step 3 more times.
- Set the eggs aside. In the same pan, add a pat of butter and place the buns cut side down and toast the buns until lightly browned.
- To assemble the sandwich place the bottom of the bun on a plate. Top with the egg portion, top it with 2 slices of bacon. Add the top of the bun, cut in half and it's ready to eat!

- Ciabatta rolls - 2 , cut horizontally into halves
- Egg - 6
- Gouda cheese slices - 2
- Bacon strips - 6 , cooked
- Butter - 1 Tablespoon
- Half and half/Milk - 1/4 Cup (4 tbs)
- Salt - 1/4 Teaspoon
- Black pepper - 1/8 Teaspoon
How to cook:
- MAKING
- 1. In a bowl, combine eggs, half and half, mix well.
- 2. In a skillet, melt butter, pour the egg mixture and stir until cooked.
- 3. On lower half of a ciabatta roll, place 1/2 of the prepared scrambled egg, place a gouda slice and 2 strips of bacon. Repeat the process to make the other sandwich.
- SERVING
- 4. Serve fresh.
- TIP
- You can also use ciabatta rolls with cheese for this recipe.

- Crack six eggs into a medium sized bowl. Add half and half to both and whisk eggs until they are creamy. Season eggs with salt and pepper. - Prepare sandwiches by cutting the rolls, adding 1/2 of the eggs to the bottom roll, then add 3 slices of cooked bacon, add cheese slide, and top with the top of the roll.
- You can wrap these in plastic wrap, they will take about a minute to reheat in the microwave.
