- 16 ears corn, still in the husks
- 8 tablespoons (1 stick) salted butter
- 1 1/3 cups heavy cream
- Kosher salt and freshly ground black pepper
How to cook:
- Cut the corn from the cobs into a bowl, then use the blunt side of the knife to press and scrape the cob all the way down to get all the bits of kernel and creamy milk inside.
- Add butter to a very large skillet over medium-high heat and melt. Add the corn and toss. Add the cream and some salt and pepper to taste, then simmer for 20 minutes. Garnish with more fresh pepper.

- 5 eggs
- 1/3 cup butter (melted)
- 1/4 cup white sugar
- 1/2 cup milk
- 4 tablespoons cornstarch
- 1 (15.25 oz) can of whole kernel corn
- 2 (14.75 oz) cans cream-style corn

- Preheat the oven to 400 degrees F. Grease a 2-quart casserole dish with cooking spray.
- Lightly beat the eggs in a large mixing basin. Pour in the sugar, milk, and melted butter.

- 4 strips Thick Cut Bacon, Diced
- 1 Sweet Onion, Diced
- 1 c. All-purpose Flour
- 3/4 c. Yellow Corn Meal
- 3/4 c. Granulated Sugar
- 1 1/2 tbsp. Baking Powder
- 1 1/2 tsp. Salt
- 1/4 tsp. Garlic Powder
- 5 Large Eggs
- 1 1/2 c. Half-and-half
- 1/2 c. Melted Butter
- 2 1/2 c. Fresh, Canned, Or Frozen Corn Kernels
How to cook:
- Preheat oven to 350ºF. Grease a 3-quart baking dish and set aside.Place bacon in a large skillet and set over medium heat. Once bacon starts to crisp, add onions and sauté until onions are soft. In a large mixing bowl, whisk together flour, cornmeal, sugar, baking powder, salt and garlic powder. In a separate bowl, whisk together eggs and half-and-half. Once onions are soft, whisk egg mixture into dry mixture. Then whisk in melted butter and the onions and bacon, including the bacon fat. Stir in corn kernels.Pour batter into prepared pan and bake until center is just barely set, about 30–35 minutes. Do not over-bake!

- 1 cup yellow cornmeal
- ½ cup all-purpose flour
- 1 tsp salt
- 1 cup buttermilk
- ½ cup milk
- 1 egg
- 1 Tbsp baking powder

How to cook:
- Preheat oven to 450ºF.
- Heat shortening in a cast-iron skillet.
- Combine cornmeal, flour, and salt in a mixing bowl.
- In a separate bowl, combine buttermilk, milk, and egg. Add baking powder and baking soda. Stir. Add to cornmeal mixture and stir.
- Add melted shortening, stirring constantly. Pour into the hot pan, smoothing the surface with a spatula.
- Bake for 20 to 25 minutes or until golden brown on top.
