Ingredients:
  • 6 ears corn, unhusked
  • 6 tablespoons unsalted butter
  • 2 teaspoons chili powder
  • 1/4 cup grated cotija cheese
  • 1/4 cup freshly chopped cilantro leaves
  • Juice of 2 limes
How to cook:
  1. Preheat oven to 350 degrees F.
  2. Place corn, in its husks, directly on the oven rack. Roast until tender and cooked through, about 40-45 minutes.
  3. Peel down the husks. Rub each ear of corn with 1 tablespoon butter.
  4. Serve immediately, sprinkled with chili powder, cotija, cilantro and lime juice.

Ingredients:
  • ¼ cup melted butter
  • ¼ cup extra-virgin olive oil
  • Juice of 1 lime
  • 1 teaspoon chili powder
  • ½ teaspoon salt
  • ½ teaspoon freshly ground pepper
  • 8 ears of corn (husks and silks removed)
  • ½ cup feta cheese (crumbled)
  • ¼ cup chopped fresh cilantro
How to cook:
  1. Wisk butter ingredients.
  2. In a bowl, whisk together the butter, olive oil, lime juice, chili powder and salt and pepper.
  3. Boil water.
  4. Fill an 8-Quart stockpot, slightly more than halfway with water and bring to a boil.
  5. Cook, then drain corn.
  6. Place the corn into the stockpot, cover and cook fresh local corn for 6 minutes (if it’s imported corn, cook for 8 minutes). Remove corn to a tea towel to drain, then place on a serving platter.
  7. Add butter mixture and toppings.
  8. Brush the cobs, on all sides, liberally with the butter mixture. Then sprinkle the feta and cilantro on top.
  9. serve hot.
  10. Serve hot and enjoy!

It’s usually cooked and served with the husk attached which is used as a handle for eating the corn right on the street. You can serve it without the husk as we have done in the test kitchen.

Ingredients:
  • 4 Ears Fresh Sweet Corn on the Cob
  • 4 Tbsp. Unsalted Butter (( We like Naked Cow Dairy Butter from Oahu ))
  • ½ tsp. Chili Powder
  • ⅛ tsp. Cayenne Powder (Or More To Taste)
  • 3 Tbsp. Fresh Lime Juice
  • ½ Cup Cotija Cheese (Crumbled Fine)
  • Salt and Freshly Ground Black Pepper
How to cook:
  1. Cook corn. Remove the husk and add corn to boiling water for 2-4 minutes. You can also grill the corn on the BBQ or add it to your IMU. Soak corn with husk in fresh water for one hour before grilling. Drain well.
  2. Mix all ingredients, except corn and cheese, in a bowl.
  3. Slather the mixture onto cooked corn.
  4. Add cheese.
  5. Serve and Enjoy!
