- 1 cup (4 ounces) shredded mild cheddar cheese, or American cheese
- 1 (10 3/4-ounce) can condensed cream of mushroom soup, or cream of chicken soup
- 1 cup milk
- 1/2 cup onion, finely chopped
- 1 to 2 cups peas, or mixed vegetables, steamed, optional
- 3/4 cup breadcrumbs, soft and fresh

- Gather the ingredients.
- Heat the oven to 350 F/180 C/Gas 4. Grease a 2-quart baking dish with 1 tablespoon melted butter.
- Cook the noodles in boiling salted water following package directions. Drain well.
- Combine the cooked noodles, diced corned beef, shredded cheese, condensed soup, milk, and onion.

- Butter a 13" x 9" casserole dish.
- Preheat oven to 375 degrees F.
- Cook noodles according to instructions on the packaging. Drain and place in casserole dish.
- In a large skillet, heat up olive oil.
- Add garlic, onion and bell pepper. Saute for 3 minutes or until the onion is almost translucent.
- Add Italian seasoning and oregano. Saute 1 minute, stirring often.
- Add ground beef and cook, breaking it apart with a wooden spoon. Season with salt and pepper.
- Add corn and stir in. Add crushed tomatoes and stir in. Bring the mixture to simmer.
- Pour the meat sauce over noodles and stir everything together. Add 1/2 cup of cheese and stir in.
- Top with remaining cheese and bake for 15 minutes.
- Remove from oven and let cool for 10 minutes before serving.
