Ingredients:
  • 5-6 garlic cloves (crushed)
  • 1 small onion (cut into wedges)
  • 3 cups of water
  • 2 TBSP sugar
  • 2 TBSP vinegar
  • 8 oz beer
  • 4 lbs corned beef brisket
  • 1 1 lb bag of baby carrots
  • 1 lb small red potatoes (quartered)
  • 1 head of green cabbage (cut into wedges)
  • {leave this out if you are using the packet that comes with the meat.}
  • 1/2 tsp mustard seeds
  • 2 bay leaves (crushed)
  • 8 Allspice berries
  • 1/2 tsp salt
  • 1/2 tsp pepper

How to cook:
  1. First place onion wedges and garlic at the bottom of your crockpot. This is going to act as a stand for your meat, so it doesn't touch the bottom and dry out. Place beef on top of onions and garlic.
  2. Next, mix together water, beer, sugar and vinegar.
  3. Pour over beef and they sprinkle seasoning packet over meat. If you are using my homemade corned beef seasoning packet, simply mix together the mustard seeds, bay leaves, allspice berries, salt and pepper and sprinkle on top of beef.
  4. Set crockpot, cover and cook on LOW for 8 hours.
  5. After 4 hours of cooking, add in potatoes and carrots.Cover and continue cooking
  6. When 1 hour remains, add cabbage to the crockpot. Cover and continue cooking for the remainder of the time.

  • 1 cup beef stock

  • 4 large carrots (peeled and cut into 3-inch pieces)

How to cook:
  1. Remove the brisket from the package, reserving the seasoning packet. Rinse the meat under cool water and pat dry with paper towels. Trim any excess fat from the meat, leaving a thin layer.
  2. Place the brisket in the slow cooker fat side up and sprinkle the top with the reserved seasoning packet.
  3. Nestle the potatoes and carrots around the brisket and pour in the water or beef broth.
  4. Cover and cook on LOW for 6 hours.
  5. After 6 hours, lay the cabbage wedges on top of the brisket and continue cooking on LOW 2 more hours.
  6. Remove the cabbage to a bowl. Dot the cabbage with pats of butter and season with freshly ground black pepper, if desired.
  7. Transfer the brisket to a cutting board and let rest for 5 minutes before slicing and serving.
