  • 1/2 cup raw cashews ((soaked for at least 1 to 2 hours if you do not have a high speed blender))
  • 1/4 cup rice wine vinegar
  • 1 tablespoons soy sauce (or tamari)
  • 1 green onion (sliced)
  • 2 teaspoons sesame oil
  • 1/2 teaspoon ground ginger
  • 1 clove garlic
  • 1-2 tablespoons pure maple syrup (to taste)
  • dash of sriarcha
  • salt/pepper to taste
  • 1-2 tablespoon(s) of water to thin (if needed)

  1. Prep Ahead Steps
  2. Cut the cabbage very thinly. You could use a food processor as well for this, but I like cutting it myself. To do this, cut it into large chunks or slices so it is more manageable. Then slice very thin and transfer to a large mixing bowl.
  3. Shred the carrots using the large side of a grater. Or use your food processor. Thinly slice the scallions. Place both in the same bowl with the cabbage.
  4. Place sesame seeds in a pre-heated pan on low heat and stir constantly for a minute until slightly fragrant
  5. In a small bowl, mix together vinegar, sesame oil, Soy sauce, mayonnaise, honey, pepper
  6. Assemble
  7. In a large bowl, mix together cabbage, carrots, and scallions. Toss with dressing to coat evenly. Top with toasted sesame seeds
