Macaroni and tomatoes is a comfort food dish and a family favorite meal. Fresh tomatoes are used to create homemade tomato sauce for this easy pasta recipe.

Ingredients:
  • Ice
  • 2 pounds vine ripened tomatoes
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 pound dried elbow macaroni
  • 5 basil leaves
How to cook:
  1. Bring a large pot of water to a boil.
  2. Fill a large bowl with cold water and some ice cubes to make an ice bath.
  3. Using a paring knife, make an "X" on the bottom of the tomatoes. Do not cut too deep, just through the skin.
  4. Once the water starts boiling add the tomatoes and cook for 30 - 60 seconds or until the skin starts to fall off of the tomatoes. Use a slotted spoon to transfer tomatoes to the ice bath.
  5. Once tomatoes are cool enough to handle remove skin. Slice tomatoes in half and remove the seeds inside. Reserve 1/2 cup of tomato seeds and juices. Dice tomatoes
  6. Heat olive oil in a pot over medium heat. Add garlic and cook just until fragrant. Stir in diced tomatoes, reserved tomato juices, salt and pepper. Bring to a boil and reduce heat. Simmer for 30 minutes.
  7. After 30 minutes, begin cooking your pasta according to package directions. At this time you can also chose to leave the sauce as is for a chunky version or use an immersion blender to make it a little more sauce like. It's up to you.
  8. Transfer cooked pasta to the tomato sauce. Stir to combine. Adjust salt and pepper if needed. Transfer to serving dish.
  9. Roll basil leaves together and chop. Sprinkle over the pasta and serve.

Ingredients:
  • 1 lb 450 g elbow macaroni
  • 1 tbsp butter
  • 2 cloves garlic
  • 1 small onion (chopped)
  • 1 1/2 cups milk
  • 2 tbsp flour
  • 1/4 cup tomato paste
  • 1 cup diced tomatoes (I sometimes add 1 1/2 cups)
  • 1/2 tsp dried oregano
  • 1 1/2 cups cheese (mild, medium or sharp Cheddar Cheese or Monterey Jack)
  • 2 tbsp parmesan cheese
  • salt & pepper to taste
How to cook:
  1. Cook the pasta according to package directions. Then drain and set aside.
  2. In a pan, melt the butter and cook the onion and garlic until lightly browned.
  3. Add the flour to the onion mix and stir, mixing thoroughly.
  4. Whisk in the milk, and stir until the mixture is thickened.
  5. Add the tomato paste, diced tomatoes and oregano. Stir until the tomatoes are warmed through.
  6. Gradually stir in the grated and parmesan cheeses.
  7. Add the pasta and stir.
  8. Serve right away and enjoy!
Notes: Old Fashioned Macaroni and Tomatoes, First: Cook the macaroni in salted water according to package directions. Drain, reserving 1/4 cup pasta water.

  • 2 cup(s) macaroni of your choice.
  • - sugar to taste
How to cook:
  1. Cook pasta according to package instructions, drain and put back into the pan. Pour in the diced tomatoes, but not all of the juice. Add sugar to taste, to take away some of the acidity of the tomatoes. Cook until everything is warmed completely through. Enjoy!
