  • 1-pound Yukon or red potatoes, cut into 1-inch cubes
  • 1 teaspoon coarse salt
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder

  • ¼ teaspoon ground black pepper

How to cook:
  1. Heat a large non-stick skillet to medium to medium heat. Once hot, add potatoes. Cook potatoes 25-30 minutes, only stirring every 7-8 minutes to allow all sides to become brown and crispy. Stir in seasonings about halfway through. Potatoes are done once they are fork-tender (very crispy on the outside, fluffy on the inside).
  2. Serve with fried eggs and micro greens.

How to cook:
  1. Place potatoes in a large baking tray. I used a big 11x17 baking tray.
  2. Drizzle melted butter and olive oil.
  3. Sprinkle salt, pepper, paprika, garlic powder, ginger powder, onion powder, Italian seasoning.
  4. Toss to coat everything.
  5. Spread out the potatoes. Use 2 trays (if you are using smaller trays) because the potatoes need to be spread out.
  6. Bake at 400 degrees F for 20 minutes or until they are cooked through in the center.
  7. Turn on the broiler and broil theM for 4-5 minutes until tops are golden brown and crispy.
  8. Garnish with fresh parsley and enjoy!

How to cook:
  1. Add raw potato cubes to a large saucepan; pour in just enough water to cover them. Add a generous pinch of salt. Bring to boil over medium-high heat.   3. Peel the potatoes and cut them into quarters. Steam them on the stove or in a microwave until barely fork tender. Let them cool down to room temperature or put them in the fridge over night.

  5. Cut the potatoes into cubes. Mince the garlic. Heat up oil and vegan butter in a large skillet on medium heat. Once the pan is hot, add the potatoes. Let them cook for about 5 minutes, then sprinkle on the seasonings, salt and minced garlic. Cook until they're golden brown and crispy.

  7. Peel the potatoes and cut them into quarters. Steam them on the stove or in a microwave until barely fork tender. Let the potatoes cool down a little bit so you can cut them into cubes.
  8. You can use a lot less oil for the air fryer recipe. In a large mixing bowl add the potatoes, only 1 tablespoon of oil, all the seasonings and salt and minced garlic. Put them in the air fryer at 400 degrees for about 15 minutes, or until they're golden brown and crispy. Shake them halfway through. Make sure not to crowd them. Do this in batches if needed.
