The real star of the show is the strange, but effective technique of coating the wings with a baking powder-laced spice rub before baking. Through the magic of chemical reactions, the surface of the chicken becomes bone-dry, and eventually crisps up to something very similar to what would come out of a deep fryer.

- 2 tablespoons baking powder
- 1 tablespoon kosher salt
- 1 teaspoon freshly ground black pepper
- 1 teaspoon smoked paprika
- 2 ½ pounds chicken wing sections
- ⅓ cup honey
- ⅓ cup sriracha sauce
- 1 tablespoon seasoned rice vinegar
- ¼ teaspoon sesame oil
- 1 pinch sesame seeds, or as desired

- Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil and place an oven-proof wire rack over the foil.
- Whisk baking powder, salt, black pepper, and paprika together in a small bowl.
- Place chicken wings in a large bowl. Sprinkle 1/2 of the baking powder mixture over wings and toss to coat. Repeat with remaining baking powder mixture, tossing well to coat. Arrange wings on the rack of the prepared baking sheet.
- Bake in the preheated oven for 20 minutes. Turn wings and continue baking for 20 minutes. Turn wings again and bake until wings are browned and crispy, about 15 minutes more. Transfer wings to a large bowl.
- For the glaze: Whisk honey, sriracha sauce, rice vinegar, and sesame oil together in a bowl until smooth. Drizzle glaze over wings and toss to coat completely.
- Transfer wings to a serving platter and sprinkle sesame seeds over the top.

- 2 pounds chicken wings, split at the joints, tips removed
- 2 tablespoons unsalted butter, melted
- 1 teaspoon granulated garlic
- Kosher salt and freshly ground pepper

- 1/3 cup honey, plus more for drizzling
- 1/4 cup Sriracha (Asian chile sauce)

- 2 teaspoons fresh lime juice
How to cook:
- Preheat the oven to 400 degrees F. Lightly coat a large rimmed baking sheet with vegetable oil. Dry the chicken wings with paper towels and place in a large bowl. In a small bowl, mix 2 tablespoons vegetable oil, the melted butter, granulated garlic, 1 teaspoon salt and 1/2 teaspoon pepper. Pour the mixture over the wings and toss well to coat. Spread the wings in a single layer on the prepared baking sheet.
- Bake the wings until browned and crisp, 45 to 55 minutes. Meanwhile, make the sauce: Melt the butter in a small pot over medium heat. Add the honey, Sriracha, soy sauce and lime juice and stir until the mixture bubbles gently. Remove from the heat and set aside.
- Carefully remove the wings from the baking sheet and transfer to a large bowl. Pour the warm sauce over the wings and gently toss to coat. Transfer the wings to a serving platter and drizzle with more honey; serve with lime wedges.

Ingredients:
- 2 lbs chicken wings
- 1 tsp salt
- 1/2 tsp white pepper
- 4 cloves garlic (grated)
- 1 inch ginger (grated)
- 2 tbsp soy sauce
- 1 tsp sesame oil
- 1 cup flour
- 1 cup cornstarch
- 1/2 tbsp kosher salt
- 1/2 tbsp white pepper
- 1/2 tbsp baking powder
- 1/2 cup honey
- 1/3 cup sriracha
- 2 tbsp rice vinegar
- 2 tbsp brown sugar
- 2 tbsp soy sauce
- 1/4 cup water
- 2 cloves garlic (grated)
- 2 tbsp neutral oil
- 1/2 tbsp cornstarch
- 3 tbsp water
- 2 quarts neutral oil (for frying)
How to cook:
- Marinate chicken wings in a bowl with salt, white pepper, grated garlic, grated ginger, soy sauce, and sesame oil for 1 hour or up to overnight for best results.
- In a large bowl, mix together the ingredients in the Seasoning Mix. Add a little bit of the leftover liquid marinade or water and rub them into the batter with your hands to create additional craggily bits.
- Dredge the marinated chicken wings in the Seasoning Mix and press the coating in well with your hands to stick to the chicken. Place on a tray and let rest for 15 minutes while you heat up the oil.
- In a heavy bottomed pot, heat frying oil to 350F and fry for 5-7 minutes and remove. Allow the oil to come back up to temperature, then double fry them for another 2-3 minutes.
- Mix together the ingredients for the cornstarch slurry and your Sauce ingredients and set them aside.
- In a medium saucepan, heat 2 tbsp of neutral oil and fry the grated garlic for 15 seconds. Then add the remaining Sauce ingredients and mix together. Simmer over medium heat for 4-5 minutes until the sauce has combined. Slowly add the cornstarch slurry then continue mixing until the sauce has thickened. Coat the wings in the sauce and enjoy!
