  • 3 medium zucchini
  • 1 cup flour
  • 2 cups Panko crumbs
  • 1/4 cup grated Parmesan cheese
  • salt
  • 2 eggs
  • 2 tablespoons water
  • Vegetable oil
  • ranch dressing for serving

How to cook:
  1. Heat about 1-2 inches of oil in a Dutch oven (I like to use cast iron). You can also use a deep pan.
  2. You want to maintain the heat of the oil around 350 degrees. If it gets much lower, the zucchini will soak up too much oil. A thermometer is helpful for this.
  3. Place flour in a pie plate or shallow bowl.
  4. In a second pie plate or shallow bowl, combine Panko crumbs, Parmesan cheese, and 3/4 teaspoon salt.
  5. Slice zucchini into circles, no thicker than 1/2 inch. Coat in flour, dip in egg mixture, and then coat in Panko crumbs. Fry in batches until golden brown on both sides, about 90 seconds per side. Drain on paper towels and season immediately with salt.

  1. Preheat oven to 425 degrees. Trim the ends off of the zucchini. Slice each zucchini into 1/4 to 1/2 inch coins. Spray a baking sheet with cooking spray or line with parchment paper.
  2. Combine the Panko bread crumbs, Parmesan cheese and Italian seasoning then mix thoroughly. Dip the zucchini coins into the egg wash then the crumb mixture, making sure to coat evenly.
  3. Place on baking sheet. Spray the tops lightly with cooking spray. Bake for 25 to 30 minutes or until browned. Cook on broil for the last 2 minutes of baking if you would like it extra crispy.

  • 1/3 Cup Flour
  • 6 oz Shredded Parmesan Cheese
  • 1 Box Panko Bread Crumbs (8 oz box)
  • 2 tsp Salt (Season as you like)

How to cook:
  1. Slice zucchini into thin sticks - I usually cut each into 6 sticks.
  2. In 3 separate bowls, place flour, egg and Panko breadcrumbs. If you have longer shaped pans (like cake pans), those size pans are easier to fit the zucchini slices.
  3. Mix Parmesan cheese with Panko breadcrumbs.
  4. Beat eggs.
  5. Season all 3 bowls of flour, egg and Panko/Parmesan.
  6. Egg mixture - 1/2 tsp salt, 1/2 tsp pepper, 1/4 tsp garlic powder
  7. Flour mixture - 1/2 tsp salt, 1/2 tsp pepper, 1/4 tsp garlic powder
  8. Panko/Parmesan mixture - 1 tsp salt, 1 tsp pepper, 1/2 tsp garlic powder
  9. Separate Panko/Parmesan mixture into 2 batches (you will want to refill halfway because this mixture can get clumpy).
  10. Pre-coat baking pan with spray or oil. Preheat oven to 425 degrees.
  11. Zip each zucchini stick in flour (coat fully), then egg (coat fully), then Panko/Parmesan mixture.
  12. Place zucchini stick on baking pan.
  13. Coat all zucchini sticks. Bake for 15-17 minutes until golden brown.
  14. Optional: serve with marinara or tomato sauce. I like to sauté up some onion, garlic and mushrooms to add to my sauce.
