- 1 green bell pepper (sliced)
- 1 small white onion (sliced)
- 2 lbs. chicken breast tenderloins
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1 tsp. chili powder
- 2 tsp. minced garlic ((or 1 tsp. dried garlic powder))
- 1/8 cup chopped cilantro
- 1 small lime
- 2 Tbsp. canola or vegetable oil
- warmed tortillas (corn or flour)
- shredded cheese
- avocado
- sour cream

- Add the bell peppers and onions to the slow cooker. Toss them together with clean hands. Lay over the chicken breast tenderloins. Sprinkle over the salt, pepper, chili powder, garlic, and cilantro. Cut the lime in half and squeeze the juices over everything in the slow cooker. Drizzle over the oil next.
- Place the lid on the slow cooker and cook on HIGH for 4 hours or LOW for 6-8. Do not open the lid during the cooking time.
- Serve on warmed tortillas with desired toppings. Enjoy!

Ingredients:
- 2 pounds boneless skinless chicken breasts
- 1 10 oz. can diced tomatoes with green chilies
- 1 red (orange and green bell pepper, julienned)
- 1 yellow onion (sliced)
- 4 cloves garlic (minced)
- 2 teaspoons chili powder
- 2 teaspoons ground cumin
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 Tablespoons fresh lime juice
- 1 Tablespoon honey
- Flour tortillas
- Sour Cream
- Salsa
- Shredded Cheddar Cheese
How to cook:
- Pour half of the canned tomatoes in bottom of crock pot. Spread in an even layer. Top with half of the peppers and half of the onion slices. Sprinkle garlic in. Top with chicken breasts.
- Sprinkle the chili powder, cumin, paprika, salt and pepper over chicken breasts. Top chicken with remaining canned tomatoes, peppers and onion.
- Cover and cook on LOW heat 6 to 8 hours, or on HIGH heat 3 to 4 hours, until chicken is cooked through and veggies are tender. Remove chicken and shred. Ladle out 1 or 2 cups of broth from crock pot and discard.
- In a small bowl whisk together lime juice and honey. Add to crock pot along with chicken. Gently toss to combine. Serve warm in tortillas with desired toppings. Enjoy!

- Combine- In the base of a 5 or 6 quart slow cooker, stir together the honey, olive oil, chili powder, cumin, paprika, salt, onion powder, garlic powder and fire roasted tomatoes. Add the chicken breasts, and turn to coat in the mixture.
- Cook- Put the lid on the slow cooker, then program to cook on low for 4-5 hours.
- Add peppers- 2 hours before serving, add the onions and peppers to the slow cooker. You can stir them in, or just let them sit on top.
- Shred chicken- Once the cooking cycle has completed, transfer the chicken to a clean bowl using tongs. Shred the chicken with two forks or using an electric hand mixer.
- Toss back up- Return the shredded chicken to the slow cooker with a squeeze of lime juice, and stir everything up with tongs.

- 2 pounds 4 pieces boneless, skinless chicken breast
- 1 teaspoon salt
- 2 tablespoons chicken fajita seasoning
- ½ white onion
- 1 red bell pepper
- 1 green bell pepper
- 1 yellow bell pepper
- 1 cup fresh pineapple (chopped)
- 3 ounces chipotle peppers in adobo sauce (pureed)

How to cook:
- Slice the veggies, and trim any excess fat from the chicken.
- Place the chicken in an even layer at the bottom of the crock pot. Sprinkle the seasoning on top, making sure each breast is well-coated.
- Add the veggies, pineapple chunks, chipotle peppers, and tomatoes on top of the chicken.
- Cover the crock pot, and let it cook on high for 2 hours or low for 4 hours.
- Remove the chicken, slice it into bite-sized chunks, and return it to the crock pot.
- Stir the ingredients until they are well combined.
