  • 3 cups white sesame seeds, hulled
  • 1 strip lemon peel, about 1/4 x 1 inch, optional

How to cook:
  1. Gather the ingredients.
  2. Bring the honey and lemon peel (if using) to a boil in a saucepan. Add the sesame seeds, stirring continuously. Continue to cook while stirring to mix completely and thoroughly.
  3. When the seeds are fully mixed in and the mixture has boiled again, remove the pan from the heat. Remove the lemon peel and discard it.
  4. Place a piece of baking parchment on a cool work surface and spread out the hot mixture thinly and evenly (about 1/4-inch deep).
  5. Cool the pasteli to room temperature before refrigerating it on the parchment paper (it doesn't need to be covered). Chill for at least 2 to 3 hours.
  6. Using kitchen shears, cut the pasteli together with parchment paper into small pieces, and serve.
  7. Peel off the parchment paper to eat. Store in the refrigerator in an airtight container.

How to cook:
  1. Toast the raw sesame seeds in a non-stick pan until golden, for 6-8 minutes over low heat, stirring occasionally. When they are golden brown and spread a nice nutty smell, remove the pan from the heat. Immediately transfer them into a bowl, otherwise they might get burnt due to the heat of the pan.
  2. Put the sugar in a large pan and let it melt over medium heat. Do NOT stir it, swirl the pan instead to avoid crystallization. When some parts of the sugar melts and some parts of it remains as it is, use a heat-proof spatula with a long handle and fold the melted sugar on the unmelted sugar. This will help the melted sugar not to burn and unmelted sugar to melt. Swirl the pan again for a few times. Repeat the same step for any unmelted sugar.
  3. When the sugar completely melts and turns into an amber color, remove it from the heat. Immediately add in the toasted sesame seeds and give it a good stir. Make sure they are combined well.
  4. Transfer the caramelized sesame seeds onto a parchment paper and spread it with a spatula. It will be too hot, so be careful and don’t touch it.
  5. Place another parchment sheet on the sticky sesame seeds and level the mixture with a rolling pin.
  6. Slice with a sharp knife when it is still hot. You can cut it into squares, triangles or rectangles. And they don’t have to look perfect.
  7. Let them cool completely and store in jars or airtight containers at room temperatures for several weeks.

  • 7 ounces about 1 ½ cup sesame seeds
  • 7 ounces about ½ cup plus 1 tablespoon honey
How to cook:
  1. Toast the sesame seeds. You can spread them in a pan and put them in the oven at 325 degrees Fahrenheit or you can toast them in a pan. You want them to get a bit of color but not too brown.
  2. Pour the honey in medium sauce pan and heat the honey until it starts to bubble. Let it boil for 4-5 minutes. If you have a food thermometer, you boil until honey reaches a temperature of 250 F (125 C).
  3. Pour the toasted sesame seeds, lower the heat and stir. Making sure all ingredients are mixed well together. Heat the mixture for 2-3 minutes more (the more it cooks the crunchier it will be-but be careful of scorching). To check if it is ready, take a small amount and drop it in a glass with water, it should stay in a ball, if it spreads out it still needs to be heated.
  4. Line a pan with slightly greased (I spray or brush with olive oil) parchment paper and pour the sesame mixture, place another sheet of parchment paper on top (also greased) and spread out the sesame-honey mix with a rolling pin. I prefer to do this step directly on the table instead of using a pan, that way I can spread as thin as I like (mine are rolled out to ¼ inch thick).
  5. Remove the top sheet carefully and let it cool for about 15 minutes. Cut in small bars (I use a pizza cutter).
  6. Let them cool completely. Remove and store with parchment paper between them in airtight container.

  • 220g honey (7.5 oz.)
  • 220g sesame seeds (7.5 oz.)
  • a pinch of salt
  • zest of 1 medium sized lemon
How to cook:
  1. To prepare this Greek honey sesame bars (Pasteli) recipe start by toasting the sesame seeds. Place a frying pan over high heat and add the sesame seeds. Toast them for 2-3 minutes until golden (not too brown). Remove the sesame seeds from the pan and set aside. Continue with the rest of the recipe quickly, so that the sesame seeds remain hot. Alternatively you can spread the sesame seeds in a pan and toast them in the oven at 180-190C (375F).
  2. In the same pan add the honey and bring to a boil, until it starts to foam. Remove the foam using a spatula, turn down the heat to medium and let it simmer until its temperature has reached 125C/260F. If you don’t have a thermometer, take a bowl of cold water and drip in a teaspoon of the honey syrup. Let it cool down for a few seconds then shape it into a small ball using your fingers. Take it out of the water and drop it on your work surface. If it sounds like it is solid, the honey syrup is done.
  3. Its now time to add the remaining ingredients for your pasteli. Add a pinch of salt and the toasted sesame seeds and stir for about 10 minutes over medium heat, using a wooden spatula. The mixture should thicken considerably and stick to the spatula.
  4. Remove the pan from the heat, add the lemon zest and stir.
  5. Line a round pan (22cm/ 8.5 inch. diameter) with parchment paper and pour in the mixture. Be careful not to touch it, as it is very hot. Spread the mixture very well using a spoon.
  6. Let the pasteli cool down for about 20 minutes and them cut into portions. If you let it cool completely then it would be harder to cut into pieces.
