Ingredients:
  • 6 vegetarian sausages
  • 800g potatoes
  • 2 heaped tsps of wholegrain mustard
  • 2 large carrots
  • 2 leeks
  • 3tbsp HP sauce
  • 2 x 400g tins of mixed beans
  • 1 x 400g tin of plum tomatoes

How to cook:
  1. Place your sausages in a large non-stick casserole pan on a medium/high heat with a drizzle of olive oil and brown for 10 minutes, turning regularly. Then transfer to a plate.
  2. Peel your potatoes and chop them into small chunks. Add them to a pan of boiling salted water and cook for 15 minutes or until tender. Once cooked, strain and let them steam dry, then mash them with half the mustard and season to perfection.
  3. Wash, trim, and chop the carrots and leaks into 2cm chunks. Add them to your casserole pan and cook for 15 minutes until softened.
  4. Add the HP sauce and remaining mustard, then pour in the beans with the juice, 1 tins worth of water, and the plum tomatoes. Break the plum tomatoes up with the back of a spoon. Bring to a boil and cook for another 10 minutes then season to perfection.
  5. Preheat your grill to high and score your sausages in 1/2 cm intervals. Sit them score side up in your casserole.
  6. Divide your mash into 4 compact balls and push them into the casserole along with the sausages. Brush the tops with a little olive oil and grill for 15 minutes until bubbling and golden.

Jamie Oliver's five-ingredient sausage and apple bake
Easy to put together and so delicious, this five-ingredient recipe will take care of you. Just a little bit of prep and you can bang it in the oven, letting it do all the hard work for you. What you end up with is a beautifully scruffy, humble combo that’s all about flavour, and is guaranteed to make you smile.

Ingredients:
  • 2 large red onions
  • 2 eating apples
  • 4 parsnips
  • 12 higher-welfare chipolatas
  • 1 tablespoon runny honey
How to cook:
  1. 1. Preheat the oven to 180C. Place a large non-stick ovenproof frying pan on a medium-high heat.
  2. 2. Peel the onions, cut into quarters and quickly break apart into petals directly into the pan, tossing regularly, then add 1 tablespoon of olive oil and a pinch of sea salt and black pepper. Quarter and core the apples, then toss into the pan.
  3. 3. Use a speed-peeler to peel the parsnips into long strips.
  4. 4. Stir 1 tablespoon of red wine vinegar into the frying pan, then pile the parsnip strips on top of the apples and onions.
  5. 5. Lay the sausages on top, then drizzle with 1 tablespoon of olive oil and add a pinch of black pepper from a height.
  6. 6. Bake for 30 minutes, then drizzle over the honey and return to the oven for 5 minutes, or until golden and delicious.

  8. Easy swaps: 
  9. • No sausages? Try chicken thighs or drumsticks, meatballs, or even nice big chunks of pumpkin or squash instead.
  10. • Like I've said before, my missus is not an onion fan, so if I was cooking for her I'd probably swap out the onions for leeks.
  11. • On the apple, feel free to swap for its partner in crime, pear.
  12. • Can't find parsnips? Try carrot or celeriac instead.
  13. • You could also use maple syrup instead of honey.
