Ingredients:
- 1 cup (228g) vegan butter (like Earth Balance), softened to room temperature
- 1 cup (220g) packed light brown sugar
- ½ cup (110g) granulated sugar
- 2 large eggs
- 2 teaspoons (10 mL) pure vanilla extract
- ½ teaspoon (2.5g) salt
- 1 teaspoon (6g) baking soda
- 3 cups (360g) all-purpose flour
- ¼ cup (30g) cornstarch
- 1, 14 oz.(283g) package dairy-free chocolate chips (also known as allergen-free or vegan chocolate chips)

- Preheat the oven to 350 degrees and prepare a cookie sheet with parchment paper or a Silpat mat.

- In a medium mixing bowl, whisk the salt, baking soda, all-purpose flour, and cornstarch together until combined.
- Mix the flour into the creamed butter on low speed, until no streaks of flour remain, scraping down the sides of the bowl as needed.
- Using a rubber spatula or wooden spoon, stir the chocolate chips into the cookie dough until combined.
- Scoop heaping tablespoons of the cookie dough onto the prepared baking sheet, leaving 2-3 inches between each scoop.
- Bake the cookies in the preheated oven for 11-13 minutes, rotating the cookie sheets halfway through the baking time so the cookies bake evenly, or until the cookies are no longer shiny and are just beginning to turn golden around the edges.
- Remove the cookies from the oven and cool on a wire rack until the cookies have firmed up or have cooled enough to enjoy.

Ingredients:
- 3 cups all-purpose flour (or gluten-free 1:1 flour)
- 2 ½ teaspoons baking powder
- ½ teaspoon salt
- ½ cup melted coconut oil (can sub vegetable oil or olive oil)
- 1 cup granulated sugar (or organic cane sugar)
- 1 teaspoon pure vanilla extract
- 1 ⅓ cup unsweetened almond milk (or other plant milk)
- ⅔ cup dairy-free chocolate chips (I use semi-sweet)

- Preheat the oven and prepare a muffin pan.
- Preheat the oven to 425°F and line a standard muffin tin with 12 liners. Set the pan aside while you make the muffins.
- Whisk dry ingredients.
- In a medium mixing bowl, whisk together the flour, baking powder, and salt.
- Whisk oil, sugar, and vanilla.
- In a separate large bowl, whisk together the melted coconut oil, granulated sugar, and vanilla extract until fully incorporated.
- Add the almond milk to the bowl and whisk again until well combined.
- Mix in the dry ingredients and chocolate chips.
- Then, slowly add the dry ingredients. Mix with a spoon until about half of the dry ingredients are combined. Then, gently fold in the chocolate chips. Mix until just combined. Be VERY careful not to over mix!
- Transfer batter to the muffin pan.
- Transfer the muffin batter evenly into the prepared muffin liners. The liners will be full to the top, this is okay. Press additional chocolate chips into the batter before baking, if desired.
- Bake the muffins at 425°F for 8-9 minutes. Then, reduce the heat to 350°F and bake for another 20-25 minutes, until a toothpick inserted in the center of a muffin comes out with a few moist crumbs, but not covered in batter.
- Cool the muffins.
- Remove the muffins from the oven and allow them to cool in the pan for 5 minutes before transferring them to a cooling rack.
- Store the muffins.
- If not enjoying the muffins immediately, store them in an airtight container to prevent them from drying out.
