Nan’s Zucchini Slice

This zucchini slice is our late nan’s recipe. It is something that we make on a regular basis, mainly because everyone eats it, but also because it is great for lunches, it makes a lot and it is fairly cost effective. But also it reminds us of her. You could bulk it up with extra veggies, but we pretty much just stick to what’s on the list. Ingredients:
- 2 medium zucchinis, roughly chopped
- 2 carrots, roughly chopped
- 1 brown onion, peeled and halved
- 5 large eggs
- 2 tbsp. vegetable stock paste (or a few good grindings of salt and pepper)
- 30 g olive oil
- 1 c plain flour (wheat, spelt or buckwheat all work well)
- 50 - 80g cheese (we use a mix of parmesan and tasty cheese, add more cheese if you like it cheesy)
How to cook:
- Preheat oven to 180ºC. Grease and flour a medium sized baking dish.
- Place zucchini, carrots and onion into mixing jug and blitz for 3 seconds/speed 5. Scrape down sides and blitz again 1 second at a time until the veggies are the size you like.
- Tip vegetables out into a large bowl.
- Roughly dice cheese and blitz for 5 seconds/speed 6. Tip cheese into bowl with vegetables.
- If using, add ham or bacon into bowl (with vegetables and cheese).
- Add eggs, oil, vegetable stock paste and plain flour into the bowl (with the rest of the ingredients) and mix with spatula until combined. This mixture is too large for your thermal cooking device to handle, so please don't try.
- Pour mixture into baking dish and bake in the oven for around 45 - 60 minutes or until cooked through.
- Preheat oven to 180ºC. Grease and flour a medium sized baking dish (like a glass pyrex dish).
- Grate zucchini, carrots, onion and cheese and add them all to a large mixing bowl.
- If using, add ham or bacon into bowl (with vegetables and cheese

- 7 large Eggs , whisked
- 2 cups packed Baby Kale or wilted Kale Leaves, finely shredded*
- 2 medium Carrots, grated
- 1 large Zucchini, grated
- 1 small Red Capsicum, diced
- 4 Spring Onions, chopped
- 4 cloves Garlic, crushed
- 1/2 cup Fresh Herbs of choice (e.g Parsley) or 2 tablespoons Dried Herbs
- 1 tablespoon extra virgin olive oil
- 5 tablespoons Coconut Flour
- Pinch sea salt
- Black Pepper
How to cook:
- Pre-heat fan-forced oven to 180°C.
- In a mixing bowl combine eggs, vegetables, garlic, herbs and olive oil until well combined.
- Add coconut flour and salt and pepper and mix to combine well.
- Spoon mixture into a lined or greased baking dish.
- Bake in pre-heated oven for 35-45 minutes or until cooked through and golden on top.
- Allow to slightly cool and slice into portions. Serve warm or chilled.
